Take that step! Don’t wait for “the perfect moment” Your growth is on the messy days. Not the perfect ones. You planned to work out 4 times this week… but it didn’t happen once. It’s been a while since I’ve posted a recipe. But I’m back in the kitchen!! I’m starting off with this dish that’s pure comfort, but the combination of spicy gochujang and Parmesan creates an incredible burst of flavor. Gochujang is a savory, sweet, and spicy fermented paste popular in Korean cooking 🌶️ Ingredients (2 p): 1 shallot 2 cloves of garlic Unsalted (plantbased)butter or olive oil 200 g kale 1 pack of gnocchi 2 tbsp tomato paste 2 tbsp gochujang 200 ml (soy)cream Parmesan cheese 1/2 lemon ————————— Method: Finely chop the shallot and garlic Warm a frying pan over medium heat with butter or a drizzle of olive oil. Once hot, add the gnocchi and cook for about 5 minutes, turning occasionally, until crisp and golden. Transfer to a plate and set aside. Return the pan to medium heat and sauté the shallot and garlic for 2–4 minutes, until soft. Stir in the tomato paste and gochujang until well mixed. Add the kale along with a small splash of water. Cover with a lid and cook for 3–4 minutes, until the kale is tender and bright. Add the cream and then add the gnocchi. Add the lemon juich, salt and pepper to tase and finish with some grande parmesan cheese 🍋 #gnocchi #gochujang #recipe #vegetarian #healthy
