Wajima rice cooked with a little wild boar fat wrapped in rice shoots and grilled. Served with a little of the grilled boar broth and some pickles.

Wild boar in a bourbon barrel. Smoked, salted, rinsed with bourbon, smoked over and over again. Hung for roughly 3 months. Shaved real thin—good on pig face panino.
