On this episode he takes home-style cooking to another level with his appreciation of the finer culinary arts, treating our kitchen to a fusion of his favourite dishes - mum’s gyoza and the humble spaghetti pasta.
Incorporating a Parmesan tuile, micro flowery greens from his home garden, and delicious dollops of chilli oil cream cheese, this was a pasta to remember.

Here’s the recipe for the Tuna Sashimi with Shiso & Jasmine Pear Oil. Perfect for spring or whenever you want something fresh and delicate. If you’re in Melbourne I got this piece of Tuna from @hinokijapanese 🐟 Japanese Shiso can be a little hard to find but I’ve found that Victoria markets and Preston markets generally have it. Be sure not to mix it up with Korean perilla which is a little thicker and is better suited for other dishes.

Nasu Dengaku (miso eggplant).. Sweet miso, smoky eggplant, and salty prosciutto on crisp flatbread.
Got the idea for this after trying @lilfrankies charred eggplant in New York it was so damn good I wanted to try it with some Japanese inspired flavours.

Natto might just be one of my all-time favourite foods and something a lot of Japanese people grew up eating. This one’s probably just for my Japanese crew, but anyways.. Here’s a super sticky, garlicky natto pasta topped with onsen tamago.
If you’ve never tried natto, it’s fermented soybeans loaded with probiotics, protein, and vitamins K2 + B2. It’s also known as one of Japan’s ultimate health foods. It smells funky and not for the faint hearted though.
