If there are two things I will never get tired of, it’s fresh bread and good kimchi. So, I’ve finally combined them! This might just be my favorite focaccia creation to date. You get a fluffy center, golden crispy edges, and the perfect spicy-tangy crunch from @jongga_usa kimchi on top. Ingredients Dough •600g (4 cups) bread flour •6g (2 tsp) instant yeast •12g (3 tsp) salt •460g (2 cups) lukewarm water •olive oil Toppings •@jongga_usa kimchi •luncheon meat •scallion •sesame seeds Instructions 1. In a large bowl, mix flour, yeast and salt until well combined 2. Add water to the flour mixture and mix until a shaggy dough forms. Allow the dough to rest for 30 minutes. 3. After resting the dough for 30 minutes, complete one set of stretch and folds. Coat in 1 tbsp olive oil. Cover and refrigerate for 24-48 hours. 4. After cold fermentation, uncover and add the dough to a 9x13 pan coated in olive oil and allow to double in size about 2-4 hours 5. After the dough has doubled, add the toppings and dimple the dough 6. Bake in a preheated 425F/218C oven for 30 minutes #focaccia #kimchi #bread #baking #recipe

Happy Cinco de Mayo! Here’s my take on the viral smashed taco trend, but with a Korean fusion twist. I used scallion pancakes instead of tortillas with a bulgogi-inspired beef patty topped with @jongga_usa kimchi and scallion salad. Ingredients •1 lb beef mince •2 tbsp soy sauce •1 tbsp mirin •1 tbsp sesame oil •1 tbsp sugar •1 tsp black pepper •5 scallion pancakes •neutral oil Kimchi aioli •2 tbsp mayonnaise •1 tsp kimchi brine •1/4 tsp sesame oil Toppings •@jongga_usa kimchi •scallion salad (2 julienned scallions, 1 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sesame oil) •black sesame seeds Instructions 1. In a large bowl, mix beef mince, soy sauce, mirin, sesame oil, sugar and black pepper until well combined. Set aside in the refrigerator. 2. Prepare the kimchi aioli by mixing together mayonnaise, kimchi brine and sesame oil. Set aside. 3. Prepare the scallion salad by tossing the scallions with soy sauce, vinegar and sesame oil. Set aside. 4. Prepare the scallion pancakes by cooking both sides until golden brown. Set aside to cool. 5. Divide the beef mixture up into fifths (~140g) and spread evenly on each scallion pancake 6. In a pan with oil on medium heat, place the scallion pancake meat side down and cook until browned. Flip and cook the other side until crispy. Repeat with remaining pancakes 7. Top with kimchi aioli, kimchi, scallion salad and sesame seeds #cincodemayo #tacotuesday #koreanfood #recipe #kimchi
