Finding a good repair guy for bakery equipment is ESSENTIAL and William from @williams_mechanical is my guy! Now you have a guy! Call him I can’t endorse him enough.
Our 80 year old Hobart Mary went for the full spa treatment with William. She got fresh grease, a brand new electrical cord, and a bearing to keep her running another 80 years. When you rely on your equipment to keep business going knowing you have someone who cares as much as you do is imperative.

That log fire crackling sound? That is the French Sourdough singing. Yes singing!
Bread will only do this when the gluten matrix is perfect and the proof and bake is perfect. It’s the sound of microscopic cracks forming in the crust as the moisture escapes as the bread cools. This is how you know you got it right.
Bread that sings tastes better AND lasts longer. If it’s not hot enough the starches don’t set quickly enough and the moisture doesn’t escape fast enough during the bake. If you pull your bread and it is not singing it means it either has too much moisture left (thus soggy and gluey tasting) or too much was removed and it’s dried out. The perfect balance point means you’ve got an excellent protective crust on your bread to preserve the freshness and flavor inside.
That’s why it sounds a bit like a log fire crackling. It’s the moisture escaping and the structure changing at a microscopic level.
When I would compete in baking competitions the judges always asked us to call them over the moment we were pulling bread out so they could listen to it sing. It would tell them a lot about the final loaf before they ever even cut into it.
I’ve won my share of prizes but the biggest prize is always knowing someone gets to enjoy that loaf and that I get to try and do it all again the next day. Not going to lie listening to bread sing gives me a dopamine hit every single time.
Gluten free sourdough? I am REALLY close to nailing this guys!!!! I’ll let you know how it goes!

Organic sourdough pizza bases!
Need a quick dinner? Sprinkle on some toppings, pop the whole brown paper baking case it comes in straight into a 450°F oven for 6-8 minutes and you have no mess pizza! You don’t need a baking sheet, you don’t need a pizza stone. I won’t even tell if you use the baking case as a disposable plate!
These freeze amazing as they are or you can buy a few, add your toppings and then freeze and make your own pre-topped frozen pizza! I have a business and a kid in Kindergarten so I get it easy dinner is sometimes the best dinner. But sometimes a small change is a simple way to make a better choice for your family without adding to your stress.
These are a great size to host a make your own pizza party for kids, a sleepover for teenagers or even a night in for the adults! Invite some friends over, set up a buffet of toppings and everyone gets to make their own personal pie!

Jerri’s Cakery and Queen Bee Bakes on Montauk Highway is the kind of place that makes you feel like you stepped into a dream. Oversized gummy bears hanging from the ceiling. Macaron and baguette shaped pillows lining the benches. And cookie bouquets so stunning I genuinely thought they were real flowers. I stood there for a full minute before I realized.
The selection is extraordinary. Cupcakes, cakes, sourdough, hot cross buns, rugelach, cannolis, brownies, seasonal breads, gluten free options and a rotating selection that keeps you coming back. And those dirty sodas — my niece said it best. And she was not wrong.
