Sappori di un Martini
(flavors of a martini)
Fresh hand cut chitarra pasta is served in a salty, briney, acidic butter sauce with wild wood sorrel, sorrento lemon, pepperoncini and an assortment of spring allium that we caramelized in dry vermouth. The goal was to touch on the flavors you could add to any form of your preferred martini (a twist, dry, dirty, etc.), then finally we top it with fried olives that we stuffed with foie gras & cream cheese.
Available the next several days, highly advise you put caviar on it.
Spring Menu brought us a bunch of firsts for the Prima menu!
Pressed Tuna, Half Chickens, Wagyu Beefs in and out side of pasta (@westholme short rib & striploin!), and the first big bevy additions from our friend @brynnkoo

Linguine alla Puttanesca in Bianca
poached cod, fennel, sicilian anchovy & prosecco
A cleaner version of the quintessential seafood pasta, sans tomato. We caramelize fennel & garlic lightly in olive oil and fry some soft herbs, then deglaze with prosecco and build a bright butter sauce with a touch of lemon, colatura & pecorino. Loaded with delicate cod loin that we have gently poached in fruity olive oil with aromatics as well as the foundation of a classic puttanesca; capers, olives & high quality anchovy.

Risotto Bianca de Mare
Butter poached ruby red prawns, dungeness crab & sea scallop are served atop a classic bianca style risotto that we've brightened up a bit with a decadent citrus infused mascarpone, all topped with freshly grated white truffle from Montenegro.
Simple simple, perfect perfect perfect.
Pulpo alla Griglia
crispy polenta, arrabbiata sugo & pine nut gremolata
We cook our octopus escabeche style and allow it to cool overnight in its liquid to absorb as much flavor as possible before charring it gently in our broiler before serving it over a crema of puréed pine nut & sweet onion alongside crispy polenta that's been infused with sun-dried tomato & calabrian chili, this is all then topped with a bright sugo in the style of arrabbiata with crushed olives & a roasted pine nut gremolata.

Girasole e Granchio
sunflower shaped ravioli are filled with mascarpone, ricotta, soft herbs and the head & leg meat from fresh Jonah crab, it's then coated in a lemon & brown butter sauce and served over nasturtium-sunflower pesto with the blossoms as well as sweet corn sugo & toasted seeds
