salmon ochazuke (serves 1)
🍣 1 salmon fillet
🫘 1 sachet miso’easy
🥄 1 tsp sugar
🍵 teabag of green tea
🐟 1 sachet dashi powder (optional)
🥄 1 tsp soy sauce (or to taste)
🍚 120g rice
🪸 seaweed, sesame seeds, & green onion to top
pat the salmon dry and quickly marinate with miso and sugar, before broiling in oven at 200c for 15 mins
brew a cup of green tea and add dashi powder (for a brothy, umami flavour) and add soy sauce to taste.
assemble the cooked rice, flaked salmon, and hot green tea. top with shredded seaweed, sesame seeds and green onion.

ingredients [makes 2 servings / 12 rolls]:
🍗 250g ground meat [we used chicken]
🧅 1/2 white onion [diced]
🥕 1 small carrot [diced]
🥬 1 large chinese cabbage
🫚 thumb of grated ginger
sauce mix:
🥄 3 tbsp soy sauce
🥄 2 tbsp mirin
🥄 4 tbsp itsu teriyaki sauce
🥄 1 tsp sesame oil
🥄 3 tbsp water
start by seperating the outer leaves of the cabbage and thoroughly washing them. blanch for 20 seconds in salted boiling water and immediately remove.
prepare the meat filling by sauteeing the diced core of the cabbage with onion, carrot, and ginger on medium heat. after 3 minutes add the ground meat, season with half of the sauce mix, and cook for 10 minutes.
pat the blanched cabbage leaves dry and add 1.5 tbsp of the meat mixture, rolling tightly and tucking the sides in like a burrito. repeat until all the filling has been used.
in a bit of sesame oil, fry the cabbage rolls then add the remaining sauce (with more teriyaki if needed). baste the cabbage rolls until the teriyaki has thickened, and enjoy over rice🍚

🥩 500g thinly sliced beef or pork [can be found in hotpot or frozen sections of asian supermarkets]
🌱1 pack soft tofu
🍄🟫 handful of mushrooms [we used shimeji]
🥣 2x classic ramen brilliant’broth
method:
thoroughly wash the cabbage leaves and layer it with the thinly sliced meat. chop into 2-3 segments depending on the height of your pot.
arrange cabbage and meat, leaving the centre hollow for some diced tofu and mushrooms. pour in the brilliant broth and simmer with the lid on for 15-20 minutes on medium heat.

🍗 200g minced chicken
🥬 4 cabbage leaves [finely diced]
🌱 chives or green onion [sliced]
🫚 1 tsp minced ginger
🧄 1 clove minced garlic
🥄 1 tbsp soy sauce
🥄 1 tbsp oyster sauce or itsu teriyaki sauce
🥄 1 tbsp mirin
🥄 1 tsp pepper
🥄 1 tsp sesame oil
🥟 frozen dumpling wrappers
🧑🍳 whatever garnish you’d like [we used green onion, sesame seeds and sriracha mayo]
method:
start by making the taco filling by sautéing the chicken and veg on medium high heat until the chicken cooks, then season with the above.
to make the dumpling shells, lightly coat the defrosted wrappers in oil. hang from a wire rack, leaving a pocket for the filling. bake in the oven/air fryer for 5-8 minutes at 180c, keeping a close eye.
serve immediately and top with your favourite herbs and sauces.

ingredients [serves 2]:
🥢 itsu restaurant’ramen original noodles
🍜 classic ramen brilliant’broth
🥩 oven-ready braised meat of choice [asian flavours pair best]
🥚 2x eggs
🥬 2x pak choy
🌽 small tin of sweetcorn
🥄 crispy chilli oil
🌱 spring onion
cook the braised meat per pack instructions [typically around 30 minutes] and get started on the other toppings.
cook eggs for 5 minutes on a gentle rolling boil for the perfect runny yolk. for extra flavour, grill corn and pak choy in a pan on med-high heat until they get some colour.
5 minutes before the meat is done, simmer the noodles and broth. assemble the ramen bowl with all the fixings and enjoy

🥟1/2 a pack of itsu spicy chicken gyoza
🥬 chopped pak choy or cabbage
🥄 1 sachet miso easy
🌶️ 1 tsp crispy chilli oil
🌱 2 chopped spring onions
🧄 1/2 grated clove of garlic
🫚 1 tsp grated ginger
🥄 1 tsp sesame seeds
☘️ chopped coriander
🥄 2 tbsp soy sauce
method:
simmer the gyoza for 6 minutes (per pack instructions) and add the pak choy for the last two.
assemble all the broth ingredients in a bowl and pour over 300ml of the boiling water.
add the gyoza and pak choy and enjoy!

ingredients [makes 6]:
🍣150g of sashimi [or 2 boxes of itsu sashimi]
🥑 1 avocado
🥟frozen dumpling wrappers [can sub with tortillas]
🫒olive oil spray
🌱top with chives, sesame seeds & sliced onion
restaurant-inspired ponzu sauce:
🥄 2 tbsp soy sauce
🥄 1 tbsp mirin
🥄 1 tbsp lime juice
🥄 1 tbsp lemon juice
🥄 half a tsp honey
🥄 half tsp grated ginger
🥄 half a clove of grate garlic
start by making the crispy tostadas, spray both sides of the dumpling wrapper with oil and bake on a tray for 7 minutes at 180c, flipping halfway.
dice the sashimi, and dress it in the ponzu sauce 10 minutes before serving [any longer will cure the fish]. thinly slice the avocado, chives and red onion. assemble and finish with sesame seeds and a touch of spicy mayo.

🧂black & white sesame seeds
🥄 1 tbsp soy sauce
brush the tuna with a tbsp of soy sauce, then coat it in sesamw seeds, patting them in. transfer to a pan and sear on medium-high heat for 20 seconds per side, searing the entire surface. slice with smooth gliding movements.
