Its marquee restaurant, Pauline is overseen by Florida Keys native chef Abram Bissell, who hones his craft in some of NYC’s top kitchens, including Eleven Madison Park and The Modern.
But at Pauline, Bissell’s cooking isn’t stuffy. His fine dining bona fides are on display, though. Small plates, mains, sides, and raws. All the fixtures of a perfect meal, orchestrated.

There’s almost a Scandinavian minimalism at play at Cotoa, especially in the whitewashed dining room with its broken tile floors and blonde wood furniture. But the food and drink? Blue crab in a creamy tomato sauce over coconut rice with tostones, and a tightly edited list of wines from regions around the world, local and Ecuadorian beers, and a refreshing house-made dragon fruit tea.
