To celebrate Instant Pot being a part of your kitchens for over a decade, we’re revisiting some classics and giving them a (yummy) twist. Risotto is one of our communities favourite thing to make in their Instant Pot’s. As part of our Tried, Tested, LOVED series, this easy-to-make, no-stir risotto is super speedy and super delicious 🍅 Ingredients: 1 tbsp olive oil 1½ cups risotto rice 1 x 400g tin tomatoes or passata 500ml chicken stock Salt and black pepper 40g Parmesan 2–4 burrata Small vine tomatoes (optional) Olive oil, for finishing Method: Set your Instant Pot to Sauté on medium heat and add 1 tbsp olive oil. Once hot, add the 1½ cups risotto rice and cook for 2–3 minutes, stirring, until the grains begin to turn slightly translucent around the edges. Pour in the 1 x 400g tin tomatoes or passata along with the 500ml chicken stock, making sure the stock is very hot. Season lightly with salt, stir well, and scrape the base to prevent sticking. Secure the lid and cook on High Pressure for 3 minutes. Allow a natural pressure release for 4 minutes, then release any remaining pressure and remove the lid. Stir the risotto gently for about a minute until it loosens and becomes glossy, with a soft but slightly al dente texture. Add the 40g Parmesan and continue stirring until melted and combined. Taste and adjust with salt and black pepper as needed. If you like, warm your serving bowls by pouring over boiling water, then drying them just before serving to help maintain the risotto’s consistency. Spoon the risotto into bowls, tear open the burrata and drape on top. Finish with the roasted tomatoes if using, a drizzle of olive oil and some black pepper. Serve immediately while soft and flowing. OPTIONAL: If garnishing with roasted tomatoes, set your air fryer to 160°C/320°F. Add the small vine tomatoes with a drizzle of oil and a pinch of salt and cook for 12 minutes until softened and slightly collapsed, then set aside. There is no need to preheat. Chilli 🌶️... normally I like to cook my chilli long & slow but here I cooked it on a pressure cooker mode. This was a first for me & I wasn't expecting to have such tender & flavoursome results! Perfect when you are short of time but still want delicious food. Although if you want it to slowly bubble away & have a meal to come home to you can also use a slow cooker mode with the @instantpotuk multi cooker. It actually has 7 functions including saute, steam,yoghurt, eggs & keep warm. So perfect if you are short of space. With a capacity for 6 portions I made extra for the freezer. You will need: 2 TBSP olive oil 2 medium onions finely chopped 2 medium carrots, grated 2 garlic cloves crushed 500g mince beef or turkey 1 TBSP cumin 1 TBSP hot paprika 1/2 TSP chilli powder 1 red chilli finely chopped or to taste! 1 TBSP dried oregano 400g tin chopped tomatoes 250ml stock 2 TBSP tomato puree A good dash Worcestershire sauce 400g tin black beans, drained & rinse Chopped fresh coriander to serve *Select saute mode on medium. Once heated add 1 TBSP olive oil & add the onions & carrots. Stir until softened & lightly coloured. Add the garlic for 1 min. Transfer to a plate. * Turn the saute up to high. Add 1 TBSP olive oil & the mince. Cook until lightly brown. * Return the onions & carrots to the bowl. Add the remaining ingredients except for the beans & fresh coriander. *Put the lid on & select pressure cooker mode & set for 20 mins. * When ready remove the lid & switch to saute mode. Add the beans & stir through. (At this point if you have too much liquid you can reduce it a little) *Stir through the fresh coriander & serve with your chosen accompaniments. I like mine with a tomato salsa, avocado, a good squeeze of lime & some pickled chillies! Ad #chilli #easycooking #pressurecooker #instantpot

Ad Air fryer roast chicken and potatoes all done within an hour, using our @instantpotuk Vortex Dual 11L Airfryer to cook the juiciest roast chicken and crispy roast potatoes, and the results were 10/10. This airfryer has 8 functions including Air Fry, Bake, Grill, Dehydrate, Roast, Reheat, SyncCook and SyncFinish, meaning you can sync both drawers to complete cooking / stay warm at the same time. The method This was a 1.6kg chicken which fitted in the larger side (7L) of my Air fryer just fine. Simply coat the chicken in olive oil or butter, salt and pepper and seasonings of choice, you can use things like rosemary, thyme & sage instead if it’s for a Sunday roast so good. I parboiled the potatoes and then coated them in goose fat (or you can use vegetable oil if you prefer) in the 4L side of the air-fryer, tossing them half way throughout cooking. The chicken was an hour to cook and the potatoes were 45 mins with 10 mins of pre parboiling, and the best thing was using the SyncFinish™ function, so the chicken and potatoes finished roasting at the same time. Which is just one of 8 functions that this mega airfryer has. Delivering Evencrisp™ technology, resulting in the perfect crunchy roast potato. Cooking in this airfryer means you use 95% less oil, while cooking up to 50% faster and using 80% less energy than a traditional oven. Plus, it can serve up to 8 people from the 11L capacity. Recipe - Carrot Cake Flapjacks (Air Fryer) This is a great recipe to use if you’re trying to make baked goods with less sugar. Although it does use honey as a sweetener the carrots also provide a level of sweetness in their own right, plus they make these flapjacks deliciously moist. Alongside the egg, this creates a texture slightly different from a traditional flapjack and a cross between carrot cake and flapjack. I’m sure you and your family will love these. Ingredients: 225 g porridge oats 2 medium carrots, peeled and grated Zest of 1 orange 40 g sultanas ¼ tsp mixed spice ¾ tsp ground cinnamon 2 eggs, beaten 100 g butter 3 tbsp honey For the topping: 50 g cream cheese 20 g icing sugar ~4 tsp milk (any kind) Method: In a large bowl, combine the oats, grated carrots, sultanas, orange zest, mixed spice, and cinnamon. In a small saucepan over medium heat, gently melt the butter and honey together until smooth. Pour the melted butter and honey into the dry ingredients and stir well to combine. Allow the mixture to cool slightly, then stir in the beaten eggs. Grease and line a 20 x 30 cm baking tin. Preheat your air fryer to 160°C. Place the filled baking tin into the air fryer and cook for 25 minutes, or until set and lightly golden. Leave to cool slightly in the tin before removing. Slice into 8 portions. Topping: In a bowl, mix the cream cheese and icing sugar until smooth and thick. Then add milk, one teaspoon at a time, until you reach a drizzle consistency. Feel fancy, without any of the fuss. Try these 15 minute Chilli Lime Air-fryer Mussels 🌶️🍋‍🟩 Ingredients: 2 kg mussels 100 g butter 2 red chilies 1 lime small bunch parsley Instructions: Clean the 2 kg mussels under cold water, removing any beards and discarding any that do not close when tapped. Once cleaned, set aside and cook shortly after preparing. Prepare the butter by adding 100 g butter to a mini food processor with the 2 red chilies (seeds removed and thinly sliced) and the juice of 1 lime (about 1½ tbsp). Blend until combined. Alternatively, very finely chop the chilies, mash into very soft butter by hand, and mix through the lime juice until evenly combined. Place the mussels into the air fryer basket in an even layer. Preheat then cook at 200°C/400°F on the air fry setting for 3 minutes, or until the shells have opened and the mussels are a vibrant orange colour. Tip the cooked mussels and their juices into a large bowl. Spoon over the chilli lime butter and toss well so the butter melts into the hot juices and coats the mussels. Finish with finely chopped parsley and serve immediately. Serve with bread or fries to soak up the sauce! Safety notes: Mussels should be alive before cooking. When raw, any open mussels should close when gently tapped, or squished—if they don’t, discard them. After cooking, any mussels that remain closed should also be discarded. Once debearded, mussels should be cooked promptly rather than stored. Always rinse well and remove any beards (the tufty piece in the seam of the shell) before cooking.
