Pearled spelt creamy risotto with lionās mane steak & white truffle

This dish has been created inspired from my visit to Innoculated farms located in New Jersey
I was gifted with an array of of mushrooms including wild Oregon truffle, itās aroma and flavour was the most umami I have experienced from truffles! The best one I have tried so far proving that great flavours donāt always have to be imported.
The land is rich and abundant wherever one chooses to care for it
I also got gifted some black trumpet mushrooms, blue oyster mushrooms & lionās mane: the centre of this dish.

I made a delicious ancient grain pearled spelt risotto as we donāt use rice in the alkaline community, this was paired with a selection of herbs, mushroom & pine broth, NJ maple syrup and some leftover creamy hemp milk & spelt flour bechamel.
A delicious plate that celebrates sustainability & the power mushrooms play in oneās wellbeing and the magic they can bring to your palate.
Ingredients:
Black trumpet mushroom
Blue oyster mushrooms
Scallion
Maple syrup
Fresh sage
Dried oregano
Stock-
Spring water
Lions mane powder from @innoculatedfarms
Pine needles
Rosemary powder
Fennel powder
Pearled spelt
Hemp cheese/bechamel
Lions mane mushroom marinated in:
Sorrel powder
Fennel powder
Onion powder
Sea salt
Everything has been cooked with cold pressed unrefined avocado oil & in non toxic ingredients as well as spring water

Joe & Caitlin are the kind hearted couple who have poured their love & time not only towards building a transparent and honest business but also towards feeding the community.
Creating opportunities to nourish children through state funding and continuing to serve those around them by honouring the soil through gentle farming practices that respect the environment.
Everything they grow has been done so completely naturally.
It was such a pleasure being able to see how much care & effort they put towards each stage of the growth from the quality of their substrate to the delicate process that is required to grow the mycellium & fruit their variety of mushrooms.
I was able to harvest my own lionās mane & blue oyster mushroom, as well as being gifted some wild black trumpet mushrooms & even getting my hands on some fresh white truffle from Oregon!
In times like this when itās of the most importance where we choose to spend our energy and what we put in our bodies, supporting local & natural farming ensures that we practice having hope for the future.

After Sundays Alkaline Brunch - Chef Chiffon headed over to provide delicious sandwiches with @innoculated in Brooklyn @rakitclub
They enjoyed a choice of BBQ or Buffalo fried lions mane sandwiches paired with Burro Hash and/or Southern Greens!
We had a wonderful time enjoying live music good food and great vibes as we celebrate all the hard work throughout the year!
@kamutpopusa was a hit for the adults and children!!
This will not be the last time @innoculated and @chiffonsvisionarycuisine will collaborate on a farm to table experience!
