World Class 2026 Shaped By Time It’s not just about where I come from, but about what luxury truly means. To me, luxury is not about price, but the ability to relive a moment to feel something once again that was once yours. Because when everything becomes a memory, flavour becomes the echo of home a way to return to that moment. I chose Don Julio Blanco because, to me, tequila is more than just a spirit it represents a commitment to time and quality. Homemade Kasu Kaoliang During fermentation, the addition of kasu not only enhances the grain character, but also introduces a subtle lactic softness and depth a reflection of time shaping flavour. Clarified Wattleseed Miso Cordial Balancing roasted nutty notes with umami, the cordial is clarified to refine its texture into a clean, structured profile, connecting both land and culture. Pineapple Oolong Tea Sparkling Combining bright fruitiness, floral tea aromatics, and a gentle tannin finish, it creates a layered progression of flavour across the palate. Don Julio González began with nothing but agave and belief. Through patience and time, he built a flavour and identity rooted in his land. This uncompromising approach is, in itself, a form of luxury. In many ways, I see myself in that journey leaving Taiwan, coming to Australia, learning, adapting, and slowly building my own path. Moutai comes from an inland highland region. Its aroma is warm, dense, and slow to unfold like the air in the Chishui River valley: steady, unhurried, and calm. What I wanted to do with this drink was to place that inner warmth together with a softer, more southern breeze, in the same sip. Maraschino brings the fruit note in Moutai slightly forward. The honey aloe cordial makes the transition after the first sip more gentle. Yuzu keeps the opening bright and clean. And pandan turns the final sweetness into something that moves like a breeze. This drink is call Chishui South Breeze: Chishui is the root. The South Wind is the direction. Creation is not about building from nothing, but giving voice to every element. In bringing “When Worlds Meet” to life, I wanted a cocktail that highlights the elegance of Ichiro’s Malt & Grain without hiding its delicate fruit and oak. Salt plum, australia roselle, verjus weaving grape with Asian memory. Sake lees, turning a by-product of brewing into a crystal-clear texture of rice and fermentation. Hop spray, capturing the bitterness and aroma. Stirred gently, these layers come together with whisky at the center. The balance is not loud, but it is precise. It is not just a whisky, but a dialogue: a Japanese soul harmonizing with voices from Scotland, Ireland, Canada, and America. Differences are not erased they are celebrated. At Moku Sydney, I stand at another crossroad every day. Japanese precision meets Australian freedom, tradition meets modernity, and cultures overlap to form a shared identity. BORN IN BOLD STEPS It all started with Johnnie Walker Black Ruby. A whisky that’s smooth, luminous, and quietly bold—unexpected, yet it lingers in all the right ways. That first sip sparked a thought: What if this could be more than a drink? What if it could become a story— a journey through places, flavours, and fragments of myself? So I followed that spark. In 2024 Emma Walker wrote a new chapter of flavor for the world, and here I am, behind the bar, opening this black ruby inspiration. Black Ruby carries her character, but it also holds my interpretation.
