Located in the beautiful rolling green hills of Gippsland, 5 minutes south of Warragul, and 90 minutes East of Melbourne, is winery restaurant Hogget Kitchen. Awarded One Hat by The Age Good Food Guide since 2020, our farm-to-table menus, which change weekly - showcase seasonal, local produce, from our open kitchen, overlooking the stunning vineyard of Wild Dog Estate. A born and bred Gippslander, Head Chef and owner, Trevor Perkins, is passionate about all things Gippsland. His genuine connection with regional producers, creates a true paddock-to-plate dining experience, where the incredible ingredients are allowed to speak for themselves. For us, this means using the freshest ingredients, at the peak of their season, an approach which allows us to support many local growers and develop relationships with food producers throughout our region. Local and seasonal food is absolutely centralĀ to our menu and the Hogget experience. We grow as much as we can for the restaurant from our farm in NilmaĀ North, a 10 minuteĀ drive from the restaurant. From our established fruit orchard, to our growing vegetable gardens and poultry flock, we even provide seasonal bouquets and event flowers from our dedicated cut flower garden. We use a nose-to-tail approach, sourcing all proteins locally, from small farms, and doing all butchery ourselves in house, respectively utilisingĀ all parts of the animal - ensuring the best possible cuts of meat and the least wastage. In old-world fashion, all pickling, bottling, charcuterie, smokingĀ and brining is all done by hand in-house - skills we are passing on to our staff, as we work preserving these techniques for future generations.
