This lot is grown by hundreds of smallholder farmers, each cultivating coffee in backyard-sized plots, often alongside crops like mango, avocado, and enset. Every harvest, ripe cherries are carefully handpicked and delivered to local washing stations, where precision meets heritage. Using the washed process, the fruit is removed before drying, allowing clarity to shine through the cup, highlighting the region’s signature brightness and elegance. At elevations reaching up to 2300 meters, the slow maturation of the Kurume varietal develops a refined and layered profile, florals, citrus, and stone fruit, all carried by a clean and vibrant structure. ♠️ 5th Card: Colombia Monteblanco Juicy Peach Honey Co-fermentation / Caturra / 1600-1750m Reminds us of: floral, peach candy, apricot, honey From the mountains of Huila, Colombia, this expressive lot comes from Finca Monteblanco, a farm known for pushing boundaries through innovation and fermentation. Sitting high above the Suaza River Valley, Monteblanco is surrounded by cool and slow-ripening conditions that help develop sweetness and clarity in every cup. The farm is owned and managed by Rodrigo Sánchez Valencia, who continues his family’s coffee legacy while exploring new ways to elevate flavor. Through co-fermentation techniques, this lot is processed with peach pulp, allowing the coffee to absorb layers of fruit intensity while maintaining balance and structure. The result is a vibrant and aromatic cup. Expect juicy peach upfront, followed by soft apricot and delicate rose tea florals, rounded by a lingering honey sweetness. ♠️ 4th Spade: Colombia Monteblanco Oriental Honey Caturra Bourbon / Co-fermentation / 1,730m Reminds us of: floral, earl grey, jasmine tea, red dates, honey From the mountains of Colombia, this lot comes from Monteblanco — a family coffee farm where tradition and curiosity meet. Monteblanco sits high above the Suaza River Valley amidst the white clouds that often drift down from the nearby peaks, giving the farm its name (“white mountain”). The farm is owned and managed by Rodrigo Sánchez Valencia along with his wife Claudia Samboni, continuing the coffee legacy begun by his grandfather. Over the years, Rodrigo has taken that heritage and pushed it forward — experimenting with varieties like Caturra, Bourbon, Pink Bourbon, and more, while investing in fermentation techniques, dry-mills, and even a cupping lab to better understand and refine cup quality. Here, slower cherry maturation at high altitude builds depth and sweetness. The controlled co-fermentation enhances aromatics while keeping clarity in the cup — a hallmark of Monteblanco’s style. In pourover, the cup opens with lifted jasmine and earl grey florals. As it cools, notes of red dates and honey sweetness unfold, finishing clean, silky, and tea-like. Now available in our store!

This Mother’s Day at Highpeak, we sat down with Josephine, the mother of our barista Seya. Since Seya was five years old, Josephine has been raising three daughters on her own. Through years of work, sacrifice, and long days that asked more of her than she thought she could give, she continued to move forward. In every daughter learning to stand on her own, there is often a mother who carried more than anyone could see. Today, that strength lives on in Seya. Hardworking, talented, and always striving to grow, she brings the same determination into her craft every day. Behind every cup she serves is a story of a mother who never stopped trying to build a better life for her children. Some of the strongest love is the kind that keeps showing up, every single day.  From the highlands of Laos, coffee is grown across the Bolaven Plateau, an ancient volcanic landscape where smallholder farmers cultivate Catuai under cool mist, rich soil, and steady rainfall. Each harvest is handpicked, washed, and processed with patience, producing a cup that is grounded, smooth, and quietly sweet. From Ethiopia, coffee traces back to the birthplace of Arabica itself, where heirloom varieties grow in backyard farms at high elevations. In regions like Yirgacheffe, farmers handpick ripe cherries and often process them naturally, allowing fruit sweetness and floral character to develop fully in the cup. One side brings structure and comfort. The other brings lift and expression. At Highpeak, these two origins meet with intention, balancing depth and clarity in every cup. Through 727, this seasonal feature goes beyond a release—it becomes a shared story between spaces.
