Our chefs have collaborated with our research team to translate the history of each state into a culinary map. The menu will be told chronologically but backwards in this immersive dinner experience.

Tracing 250 years of FilipinoâMexican culinary exchange, this dinner explores the ManilaâAcapulco Galleon Trade (1565â1815) â when ingredients, techniques, and people moved across the Pacific and reshaped both kitchens.
Through a 6-course tasting menu, we examine what crossed the ocean â and the stories that came with it. This is the Mexican chapter of Filipino cuisine, told with history and creative precision by Gyu+âs Chef Izzy who is of Mexican heritage, and our Istorya Chefs Dio and Justin.

This Tuesday, we close GaleĂłn. Hereâs what we served.
This series traced how Filipino cooks responded to Spanish colonial rule. The dishes are grounded in documented history and shaped by research, including our Chapter Four storytelling frameworkďżź.
Youâll taste Filipino-Spanish inspired dishes from this chapter in history:
⢠Ensaymada adapted in Philippine convent kitchens
⢠Empanadas filled the Pre-Colonial way
⢠Arroz caldo shaped by trade and technique
⢠Flan De Leche refined by Filipina cooks
Every course here carries a Spanish influence. Every course carries a Filipino decision.
Chefs Dio, Justin, and Anjelique reinterpret these histories through their own technique and voice. Not to replicate the past, but to show how Filipinos made imposed systems work in their favor.
To close the night, the Philippine Heritage dancers will perform La Jota, a dance that traveled across the empire and was localized in the Philippines.
We end the chapter by showing movement, not just food.
