We were recently featured in @nytimes for something we’ve been advocating for since 2010: bringing small-scale, city-based food manufacturing to Baltimore. When we launched HEX Ferments in 2013, we were told it couldn’t be done. A zoning official literally laughed. The health department joked that “Fermentation” sounded like a last name. One official called our work “impossible and dangerous.” But we proved them wrong. 💪 It took 3 years, endless meetings, and some unexpected allies — but we opened Baltimore’s first legally permitted fermentation kitchen and never looked back. 🫧There’s a lot quietly bubbling over here at HEX… Smoky Pineapple Kombucha is officially here to stay, and it’s last call for Green Tomato Kimchi, Black Radish Kraut, and Goth Kimchi - our collab with @MadRadishFarm - Deeply rich, spicy, and basically what every kimchi-on-everything person has dreamed of. Don’t forget the fire cider (and a hot sauce restock is coming soon 👀). Behind the bar, Hunter’s deep into round three of building a naturally carbonated pickle soda from HEX Ferments brine. Experimenting with a ginger bug that’s learning how to live its best acidic life. If you remember the Solar Pop (made with our Solar Kraut brine), you’ve had a taste of where this kind of behind-the-scenes tinkering can lead. Well hello there gorgeous-> @hexsuperette by @hexferments -> First visit to HEX Superette and let me tell you, this was an experience. I tried the salmon rillette , snagged a charcuterie moment, sampled every single one of their brines, and yes every one, sipped on a beautifully balanced mocktail, and then had my mind absolutely changed by the kimchi beef bulgogi enchiladas. That dish alone deserves its own moment. Before leaving, I stocked up on my favorite Glow Kraut and a bottle of the Glow Kraut brine from HEX Ferments, because once you taste it, you immediately start dreaming up what to use it on next. So go ahead and do a 1-2 punch - stop at @heritagesmokehouse before or after.
