Making restaurants in NYC is a lot like unpacking matryoshka dolls, but each layer is another ACME style booby-trap that someone set in 1962. Nick was on-site for most of the @claud_nyc build out, and the bonds you form disarming figurative bombs as a unit are deep. Chefs like Nick are the reason I do any of this.
