Ooooooshi! We start with layers of salmon or ebi and seasoned Hello Nori rice, pressed into perfect rectangles.
Then comes the transformation.
We charcoal torch the oshis, searing the fat and caramelizing our signature sauce. In seconds, the texture transforms. The top becomes delicate and smoky, while the centre is buttery for that melt in your mouth experience.

Over the past week, we’ve seen lineups, familiar faces bringing friends, stories being shared, and so many of you posting and spreading the word. Every visit, every message, every moment of support during our soft opening has meant more to us than we can say.
Bringing @hellonori to a new city is something we don’t take lightly, and to feel this kind of energy from the community right from the start has been incredibly special.

@hellonori is opening their first location in Calgary on April 24! The first 1000 guests even get a $25 gift card. Located in Bridgeland, they are a popular hand roll bar originally from Vancouver. A few years ago we tried their Vancouver location on Robson and fell in love. We were so excited to hear they were finally opening a location in Calgary! We tried a variety of dishes, including the Aburi salmon oshi topped with Wagyu, the chefs special sashimi and of course the hand rolls.
We were blown away with the quality of the sashimi, everything was so fresh! The hand rolls were definitely the star and our favs were the truffle lobster and Hokkaido scallop. It’s super aesthetic inside and we received amazing hospitality and service during our visit.
