We’re not always weekly meal planners. But last week things got hectic, so we prepped almost all of this on Sunday. Made the whole week easier. If you’re in a stretch like that, here are five things to make this Sunday. Each one gets its own video in the coming weeks. Save this as your starting point. 1. Italian Meatballs — Make a big batch. Use all week — on pasta, in subs, alongside veg. Use Epicure Italian Meatball Seasoning. Freeze whatever you won’t use. 2.  BBQ Chicken Breast — Roast, slice, use in bowls and wraps all week. Epicure BBQ Chicken & Rib Rub. 3.  Roasted Root Vegetables with SPG — The side that goes with everything. Roast once, eat all week. Epicure SPG. 4.  Pulled Pork — Slow cook Sunday. Tacos Monday. Apparently Jennifer Aniston ate this every day on the set of Friends. Whether or not that’s actually true (the internet says yes, her former assistant has gently said no, we say… does it matter?), the salad itself is undeniably good and with Epicure Greek Dressing it’s bright, lemony and easy to make. Like most things from the ‘90s, it’s making a comeback in our kitchen. 🥗 Jennifer Aniston Salad Serves 4 · 20min · $2.79/serving — 1 cup uncooked quinoa + 2 cups water — ½ English cucumber, diced — 1 small red onion, diced — Juice of 2 lemons (about ¼ cup) — 3 tbsp olive oil — 1 tbsp Epicure Greek Dressing Mix — 2 cans chickpeas, drained + rinsed — 2 cups baby spinach — ½ cup crumbled feta — Pistachios or slivered almonds, optional Rinse the quinoa, then combine with water in a saucepan. Bring to a boil, reduce heat, cover, and simmer 15 min until the water’s absorbed. Fluff with a fork and let cool slightly. While the quinoa cooks, dice the cucumber and red onion. In a large bowl, whisk lemon juice, olive oil, and Greek Dressing Mix. Add the quinoa, veggies, chickpeas, and spinach. Toss. Top with feta (and nuts, if you’re going there). Eat now or store up to 5 days in the fridge. The Greek Dressing Mix carries the herbs for you — mint, oregano, all in.
