//Last night, I made two pies. This is the test pie that survived. I’m still learning about thin crust, and eventually cracker thin, so I always make enough for two pies. A classic cheese and what I call the Chicago Handshake. Both recipes are still works in progress, but I like to try something a little more different each time.
This particular dough I’ve been trying to get better with. It can be ready the same day, but I’d like to try an overnight cold ferment next.
Then you have rolling/stretching the dough. That is definitely still a work in progress for me. The pie I lost to the oven gods, was probably my best rolled dough I’ve done. Solid 12” circle.
What I ended up being really happy with in the end, was the sauce. I have really dialed in what I’d like my own sauce to be, and I’m going to jar some this summer so if you want some, hit that subscribe button, jk just text me. (I’ll also be doing jam again and I have a rebrand and more jars this time around).

//So, I finally got around to trying a slice from @costco and you know what? I’d do it again. It was better than other store-made pizzas I’ve tried, better than convention center pizza, and it’s honestly better than some big pizza chain names. So if you like some flop, like a doughier bite, and like tons of cheese, this one’s for you. And if you’re like me and need a snack to temper you while you make your way through the endlessly crowded aisles, then this is for you too. ✨🛒🍕✨
//There’s plenty of pizza and places I haven’t tried in Chicago and while @thestopalong is definitely not new, I’ve just never made it. So deciding to try something new, for us,we popped in to split a small pie and a burger, and what a treat it was! Craving some meat and something different, I went with the Return of The Spaceballs, and while the toppings were all paired well, I was really obsessed with getting more of that dough into my mouth, if I had been any hungrier or committed, I would have ordered some garlic knots just to eat more of this dough, it was that tasty. Also, the staff were super sweet, even while being super busy, so thank you for that and the food! ✨🍕🍔✨
//Been testing different flours and hydrations for a #tavernstyle bar pie to make same-day at home. This dough comes together in under 30 minutes and only needs to proof for 2.5hrs. A quick roll out and a no-cook sauce really make this an easy weeknight meal option. I’m still making tweaks to the sauce and ratios for toppings but this definitely made for a fun mid-week #pizzaparty
**Not pictured or talked about are the two trips that @realgrimace had to make to @wholefoods because I forgot to check the Italian sausage in the fridge 🫣 And the wonky shape the 12b dough got rolled into, and that we didn’t eat until almost 8:30 🫠
//Pizza City Fest Day 02! Got here right at doors and managed to get through way more slices today. The day’s line up brought out a lot of the names you usually here on list, but I want to a give a shoutout to a true hidden gem, @pompei_restaurants I have been eating here my entire life, and it’s worth a visit no matter what kind of pizza you like. It’s the type of pizza that holds up to the nostalgia you feel when thinking back to it, and let me tell you, that’s rare. In other news, I also walked away with some @rosagrandepepperoni that I can not wait to put on top of my next #detroitstylepizza Truly a great way to end the first @pizzacityfest ✨🍕✨
//Pizza City Fest Chicago Day 01 🍕✨ While I hoped for a bigger haul on day one, I’m glad I got the chance to try some of the places I haven’t visited yet. Featured here are some #deepdish heavy hitters, a #crackerthin #tavernstyle and a #napoletana These pizzerias had so much heart! Their dedication to getting a LOT of people their pizza in sweltering heat and with a few equipment issues truly shows how much everyone cares about their product. Not featured here are a couple other slices we managed to grab and the short demos and seminars hosted onsite. The #detroitstylepizza workshop gave me some notes to apply to my next pie and I also had the chance to hear from some #womeninpizza While I don’t have current dreams of opening a shop, outside of it jokingly being my retirement plan, it was great to hear what inspires everyone and learn some tips.
