Only cook with wine you’d happily drink - that’s always been my rule, and it’s exactly why I love what @hello_bipod are doing with their Kabuto stopper. As a cook, there are times when I want to open a good bottle for a sauce or a braise or a tagine - not something second-rate, but you don’t always want to finish it there and then. The Kabuto, paired with their DRO!D system, pulls out the oxygen and slows oxidation, keeping the wine fresh and full of character for days. It means I can cook with good wine, pour a glass when I feel like it, and come back to the same bottle later without any loss of flavour. There’s also less waste, which can only be a good thing, it’s hard to argue with that.
