I won’t lie, I was really nervous - starting my first ever business there are SO many things you don’t know if you’re doing right, and this was one I really cared about. Cleanliness has always been a big thing for me, so getting a 5 just feels like such a relief 🄹 ALSOOOOO… thank you to everyone who came in today while the inspector was there šŸ˜‚ my head was honestly spinning even though I knew we were doing everything right 🤯 I was like trying to act calm but internally I was like ??? šŸ˜… so thank you for being patient with us šŸ’˜ So proud of us, and honestly just so grateful for everyone supporting our little coffee shop in North Hykeham near Lincoln - we’re learning every day and putting everything into it. What a wild first couple of weeks it’s been! šŸ„¹šŸ’˜ Opening Honey & Thyme has honestly been one of the most exciting and overwhelming experiences, and the support from the Lincoln and North Hykeham community has meant more than we can say. Every coffee ordered, every matcha, every brunch bowl, every message and kind word - we’ve felt it all. Running an independent coffee shop is a huge learning curve, so we’ll be taking Monday 16th March to rest, reset and recover after our first busy weeks. We want to make sure we keep showing up with the same energy, quality coffee and warm space that you’ve all been enjoying! We’ll be back open Tuesday 17th March, ready with speciality coffee, matcha, brunch, bakes and all the cosy coffee shop vibes. We made it! Yesterday felt completely surreal and I don’t think that it’s sinked in yet! 🤩 Honey & Thyme is now open in Lincoln… and I honestly don’t even have the words. After weeks of building, painting, deliveries, setbacks and big decisions, we opened the doors to our new coffee shop in North Hykeham yesterday, and the support was overwhelming. To everyone who showed up, queued, shared, messaged, brought friends, and chose to spend their time with us… THANK YOU. I felt so grateful watching people sit in a space that started as a building site just weeks ago. And just like that… we have an opening date šŸ¤ā˜•ļø If you’ve been here since the empty conservatory, the pink paint everywhere, the fridge that barely fit through the door and the Friday 13th chaos… this one feels big. Honey & Thyme is officially opening in Lincoln 🄹 What started as a building site is now becoming a cosy coffee shop in North Hykeham - somewhere for slow mornings, catch-ups over matcha, fresh pastries, and community events. Everything I did in week 1 of owning a coffee shop ā˜•ļø I thought week one might feel calm and organised. It did not šŸ˜‚ In the first week of owning this coffee shop in Lincoln, I completed my Level 2 Food Hygiene for Catering course and finished the Beginners Barista course with 200 Degrees - because if I’m opening a coffee shop in Lincoln, I want to do it properly from the start. I registered with Nisbets, IKEA and Booker and did my first essential shops, which made everything suddenly feel very real. I took all the ā€œbeforeā€ photos of the space, spoke to the landlord about a few issues (which he’s now sorting - very grateful for that), started painting the bathroom, filled and sanded the walls after a very necessary B&Q trip, and mopped the floors more times than I can count. Outside, I started cleaning up the garden and picked up my first load of gravel, which felt oddly significant. Somewhere in the middle of all of that… I also got engaged šŸ’ because apparently opening a coffee shop in Lincoln wasn’t enough life admin for one week. Opening a local coffee shop isn’t just about menus and aesthetics. It’s courses, supplier accounts, sanding walls, sorting practical problems, hauling gravel and slowly turning an empty space into something that feels like it has potential. Week one of building this coffee shop in Lincoln has been full on - but every small job makes it feel more real. Sain dweud hyn yn aml ond weithiau fi’n teimlo bach fel hybrid (🄲) Fi ā€˜di byw mewn gwahanol lefydd, teithio lot ar gyfer gwaith, cael cyfleoedd hollol random ac ANHYGOEL… ond pan fi’n stopio a meddwl am y peth, mae’r rhan fwyaf ohonyn nhw wedi dechrau gyda’r un peth - cael fy magu yn Sir GĆ¢r a siarad Cymraeg. A dyna ni. Dim byd fancy. Dim ā€œmaster planā€. Jyst y ffaith bod yr iaith a’r gymuned yna wedi rhoi sylfaen i fi heb i fi sylweddoli ar y pryd. A fi’n meddwl bod e mor bwysig i gofio ā€˜na pan ma’ socials yn ā€˜neud i ti deimlo bod rhaid symud i rywle arall i ā€˜neud rhywbeth mawr. Mae cyfleoedd yma hefyd. A hyd yn oed os wyt ti’n symud i ffwrdd am gyfnod - ti wastad yn gallu symud adre šŸ¤ - I often say this but sometimes I feel a bit like a hybrid (🄲) I’ve lived in different places, traveled a lot for work, had completely random and AMAZING opportunities... but when I stop and think about it, most of them have started with the same thing - being brought up in Carmarthenshire and speaking Welsh. And that’s it. Nothing fancy. No ā€œmaster planā€. Just the fact that the language and that community gave me a foundation without me realizing it at the time. And I think it’s so important to remember that when socials make you feel like you have to move somewhere else to do something big. There are opportunities here too. Today actually felt like a proper turning point! šŸ„³šŸ˜† It was one of those full-on days with meetings, decisions, back and forth chats… and it just felt so good to finally crack on and see things actually moving. The meeting with the landlord went so well - I honestly feel like I’ve hit the jackpot with him. He’s been so supportive from the start, and when you’re opening a coffee shop in Lincoln for the first time, that kind of support makes such a difference šŸ„²ā¤ļø We got loads sorted!! A plumber is coming in, and someone’s removing the bulky units (thank goodness because they were not it). I’ve also got the go-ahead to paint the inside of the conservatory which I’m VERY excited about - I’m pretttttyyyy confident that it’s going to completely change the feel of the space. The garden is finally getting some love too. It’s being tidied up, fresh gravel is going down where it needs it, and I’ll be working with a gardener going forward. I’m weirdly most excited about adding thyme to the herb garden - it feels like such a small detail, but for this local coffee shop in Lincoln, those little touches matter so much to me. We’ve also confirmed the signs for the gate and inside the coffee shop (which makes it feel very real all of a sudden), and now I’m just waiting on the flooring specialist in Lincoln to pop in so we can keep the momentum going. It’s still early days, but little by little this coffee shop in Lincoln is coming together. Bathroom Diaries - Part 1 šŸŽØ Today was all about getting started on the bathroom as part of the coffee shop renovation, and I’ll be the first to admit - I am not a DIY gal. I’m very much learning as I go and figuring things out step by step. Walking into the space, I knew I needed to start with something manageable, and the bathroom felt like the right place to begin. The main goal for today was simple: get rid of the pink. I really didn’t like the colour, and it made the space feel dated and dark, which is the opposite of what I want for the coffee shop. So I started with the ceiling and a base coat on the walls, using Good Home white paint from @bandq_uk to create a clean, neutral starting point. Nothing about today was glamorous - just prep, paint, and trying not to make too much of a mess - but already the space feels brighter and more put together. This base layer is all about setting things up properly before adding any colour. Next up will be the green, which I’m genuinely so excited about. It’s going to completely change the feel of the room and tie in with the overall vision for the coffee shop. Day 1 of owning a coffee shop! ā˜•ļø If I’m being completely honest, today felt a bit surreal… and slightly confusing. I suddenly had the keys, a whole space to myself, and no very clear idea of what you’re *actually* meant to do on day one. There’s so much I want to get stuck into, but also so much I can’t touch yet thanks to my very limited trade skills 🫠 So instead of panicking, I focused on what I could do - sorting out the bathroom, tidying the garden, and slowly getting a feel for the space. Nothing glamorous, but it felt good to start somewhere. Every little job makes it feel more real, and today definitely felt like the first small step in turning this into a proper coffee shop.
