Arancini Recipe
Rice: 4 cups arborio rice 6 cups chicken broth ⅓ cup butter pinch saffron salt (measure by eye) 1 cup finely grated Parmesan cheese (oops said mozzarella in video, it’s Parmesan!🤌🏼)
Meat:
Chop 1/2 onion 🧅 (I like it fine) Stick of celery (also fine)
Small carrot diced, fine (get it by now?) 2 garlic cloves (don’t make me say it) 16 oz ground beef ¼ cup red wine 2 cups tomato puree 1 tablespoon tomato paste ½ cup chicken broth Salt, pepper, garlic powder to taste Lastly I throw in a bag of frozen peas
To assemble and fry 1-2 egg scrambled in a bowl Italian breadcrumbs (I use 4C)
8 ounces mozzarella cheese. Not fresh, too much water. I also shred it myself. Never buy shredded cheese in the bag.
Take your rice, cup your hand, make a half moon shape. Add a tablespoon or so of meat mixture, add shredded mozzarella and then cover up with another half moon of rice. Roll like you would a meatball.
Once all balls are rolled, start dipping in the egg mixture, I like to make sure they aren’t saturated in egg or the breadcrumb will get mushy and fall off after the fry. Big no no.
Roll in breadcrumbs and put on wire rack.
Once all balls are breaded, throw them in a pan with olive oil, make sure oil is hot. 🔥
Roll them around in pan until desired color and remove and place back on wire rack until you are ready to plate or pack. ❤️
Enjoy with some homemade sauce.
