TSOUREKI workshop aka eat as much sugar as you can in 2 weeks of preparation 🫠 I had THE best time, I hope you did as well! It was an absolute pleasure to spend Sunday evening with an excellent group of people, some friends and some friends-to-be 💛 Even the ones who thought they were better at eating them than making them left with a couple of delicious loaves they made! Triple Toasted Vanilla Ice Cream 🍦
This is all about the Maillard reaction - toasting and caramelising elements to achieve bigger depth of flavour!
(I don't understand why people use the term Vanilla to describe something basic or lame. Vanilla is THE king of natural flavours/aromas).
So we char the the vanilla pod, toast the milk powder until golden, caramelise part of the sugar, and voila - vanilla is sexier than ever.

For the Cake: 230 g Sugar Zest 1.5 Lemons + 1/2 Lime 170 g Whole Eggs 115 g Double/Heavy Cream 185 g Cake Flour (or plain AP flour) 3 g Baking Powder 1 tsp Turmeric ½ tsp Salt 60 g Neutral Oil 1 tsp Lemon Extract
