Sake production starts with rice milling. Once the rice arrives at the brewery, it is polished to remove the outer layers of each grain, exposing the starchy core. The percentage to which the rice is milled is called seimaibuai and refers to the amount of rice remaining after polishing.

Sake brewery mini series ep.04 → The Art of Balance
Hakkaisan Sake Brewery (Niigata) – Established 1922
Hakkaisan (八海山)’s precision goes beyond what you taste.
They operate their own rice polishing facility, slowly polishing rice for up to 72 hours to preserve quality.
Their water, “Raiden-sama no Shimizu (雷電様の清水),” is an extremely soft source most breweries avoid, but they’ve mastered it, even adjusting minerals during fermentation.
Every step is intentional: small batches, hand-made koji (麹), and precise water control.
This unseen discipline is what makes their sake so refined.

We hosted an Amazake tasting at Food Cellar Market on the other day, and it turned out to be an incredible day!
Many visitors had never tried amazake before, but so many people were curious enough to take a sip—and we were thrilled to see the sales exceed our expectations.

シアトルの定番食材マニラクラム!Japanese-Style Manila Clam Chowder 🦪🍶
White miso & dashi, made to pair with sake
Manila clams are loved for their clean umami and gentle sweetness.
By adding a touch of white miso and Japanese dashi to creamy chowder,
this soup naturally connects American comfort food with Japanese sake.

Ingredients (serves 2–3)
🦪 Manila clams – about 500 g
🧅 Onion – 1/4, finely chopped
🥓 Bacon – 1–2 slices (optional)
🧈 Unsalted butter – 10 g
🌾 Flour – 2 tsp
🍶 Dashi – 200 ml
🥛 Milk – 200 ml
🍚 White miso – 1–1.5 tbsp
🌿 Black pepper – to taste
🌱 Scallions or mitsuba – to finish

Prep
1️⃣ Purge and clean the clams.
2️⃣ Steam with a little water until shells open.
3️⃣ Remove the meat and strain the clam broth — this is pure umami ✨

How to make
1️⃣ Sauté onion and bacon in butter over medium-low heat.
2️⃣ Add flour and cook until smooth.
3️⃣ Pour in dashi and clam broth, stirring gently.
4️⃣ Add milk and warm slowly (do not boil).
5️⃣ Turn off heat and dissolve white miso.
6️⃣ Return clams and warm gently.
7️⃣ Finish with black pepper and herbs.

White miso should be subtle — not “miso flavored,”
but a quiet bridge between dairy, clams, and rice-based umami.

From the very first time I met founder Carrie and Chef Wei, I was deeply moved by the stories, the intention, and the care behind everything they do.
