I say “behind,” but in truth, she stands at the heart of it all…the foundation that holds everything steady. Not only as my partner in life, but as the force that keeps me grounded, focused, and constantly evolving. While I refine each dish, she refines me bringing clarity, structure, and purpose to everything we create. Haitch Table is not just my vision. It’s ours. And none of this would exist without her. My dream team begins with my dream girl and I am endlessly grateful.

Day four at the Provence @bellevieretreats ✨ We woke to rain drifting softly across the countryside, a slower morning at the villa spent between yoga by the fire and quiet journaling as the house eased into the day. Later, we traveled to Avignon for lunch at @la_mirande , one of my favorite places in France. We began with champagne in the Salon Rouge before a private tour of the historic property and a four-course lunch with wine pairings in the Salon Napoléon III. Back at the villa, afternoon tea was waiting in the library with warm scones and vanilla bean cream prepared by our private chef, Harry of Haitch Co. As evening fell, we gathered in the salon for a candlelit dinner at home. Braised artichoke to begin, chicken with morels roasted over the fire, and a strawberry and elderflower millefeuille to finish. And before bed, a candlelit bath. Bonjour from day three at the Provence @bellevieretreats . ✨ This morning, we left the villa behind and drove through the Provençal countryside to L’Isle-sur-la-Sorgue, one of the most beloved antique towns in the South of France. The day began with a classic French breakfast at a turn-of-the-century café beside the canals before we wandered through the renowned market in search of art, porcelain, silver, and 18th-century treasures hidden among the winding stalls. There is something endlessly inspiring about L’Isle-sur-la-Sorgue…the faded shutters, flowing water, overflowing antique shops, and the feeling that beauty and history are simply part of everyday life here. After an afternoon spent exploring at leisure, we returned to the quiet of the villa where guests relaxed in the garden beneath the plane trees as golden hour settled across the countryside. Inside, I prepared for an evening inspired by the grand dame hotels of France—candlelight, layered tablescapes by @bigdaydesign , and local wines poured slowly as the sun disappeared behind the olive groves. Dinner began with strawberry gazpacho, followed by lobster soufflé with caviar and salmon en croûte, ending with strawberry rose pavlova prepared by our private chef @haitchtable . And as the evening came to a close, we gathered once more for tea and conversation by the fire. Day two at the Provence @bellevieretreats .✨ We began the morning slowly at our 18th-century villa in the French countryside with breakfast on the terrace beside the fountain, fresh pastries, coffee, and the soft quiet of Provence before the day began. Later that morning, we drove into Saint-Rémy-de-Provence for a cooking class with @la.cuisineprovencale centered around the traditions and flavors of the region. The experience began at the village market, where we wandered through stalls overflowing with seasonal produce, fresh herbs, cheeses, flowers, and olives, gathering ingredients from local farmers before learning to prepare a traditional Provençal meal together. After lunch, guests spent the afternoon exploring Saint-Rémy at their leisure…linen shops tucked along stone streets, cafés spilling into the squares, antique stores, and hidden corners throughout the village. Back at the villa, the evening unfolded slowly beneath the pergola with candlelight flickering across the table by @bigdaydesign and local wines poured as the sun disappeared behind the plane trees. Dinner began with a delicate celeriac rose, followed by red mullet stuffed with Provençal ratatouille, and ended with vanilla cream, strawberry, and basil confit, all cooked by our private chef @haitchtable . And after dinner, we gathered by the fire once more for tea and conversation late into the evening. Day one of the Provence @bellevieretreats .✨ We arrived in the French countryside before our guests, waking with the light as the villa slowly came to life for the week ahead—an 18th-century estate surrounded by olive groves and sunflower fields, where mornings feel unhurried and every detail is considered. We spent the early hours preparing the house and placing welcome gifts in each room—a curated collection of local delicacies, bespoke silk scarves, and our custom Provence guidebooks designed to accompany the week. By afternoon, guests arrived and were welcomed with wine, pastries, and a quiet exhale into the rhythm of the retreat. As the sun began to soften, we gathered in the garden for the first evening together—champagne, cocktails, and canapés by @haitchtable . Oxtail ravioli, beef consommé. Sometimes, restraint says more than complexity. Rather than building a dish around contrast or distraction, this one is centred entirely on a single ingredient… beef. Oxtail, slow-cooked until rich and deeply flavoured. A clear consommé, light and precise. A beef and red wine reduction, finished with butter, adding depth and quiet intensity with a drop of sherry vinegar to cut through that richness. A complete balanced dish.
