this is my recipe for my “valley home style white” bread, named for the lovely folks I serve in the Annapolis Valley. It’s best for farming families, equestrian households, fisherfolks, ‘regular joes’ and everyone in between.⠀

Valley Homestyle White⠀
-2 tbsp dry active yeast⠀
-1 tbsp sugar, honey or maple syrup⠀
-2 2/3 cups of ‘just bearable’ hot water⠀
— mix and let bloom to a foam⠀
⠀
In a separate bowl:⠀
-1/4 cup white sugar, honey or maple syrup⠀
-1 tbsp salt⠀
-3 tbsp room temp butter⠀
-8 cups ap flour⠀
Egg wash⠀
⠀
Combine bloomed yeast with dry ingredients and knead until combined. Place in an oiled bowl and cover till doubled in size, punch down and let rise again. It should feel like a fat baby’s thigh, light and airy. Your fingerprints should leave impressions, if you tick those boxes you’re ready to divide into two and shape into two logs. Pinch the seams in the dough so they don’t open and flip over so seams are pan side down.⠀

You can use loaf pans or a baking sheet, it only changes the shape. ⠀

Once doubled in size, or risen past the top of the loaf pan (again, finger impressions) coat in egg wash (1 egg+ a splash of water) if you want, it’s optional but leaves the loaves shiny and looking great. I get lots of satisfaction from egg wash and you will too. Also, I gave mine some slight scores to help steam escape. Play around with scoring the top of your bread. It’s at least 25 percent of the fun.⠀
