Frequently asked question: How do you cook a thick cut of meat? Like one thicker than your typical steak? Step 1: Break out your cast iron pan. Or at least an oven safe pan. But really you should have a cast iron pan. Step 2: Preheat your oven to 400*F. This is going to involve a one-two combo of heat. Step 3: Heat a little oil in the pan over medium-high. When it shimmers, add the cut of meat, which you’ve aggressively seasoned. Sear until well browned, 2 to 3 minutes a side. Step 4: Put everything in the oven and cook until a digital thermometer inserted into the thickest part of the cut registers your desired doneness. Step 5: Wearing oven mitts (that pan is screaming hot by now), remove the pan, transfer the meat to a plate to rest, and then dig in. New Year’s Food Resolution #2: Have some fun with food, would you? So much about dieting is sucking the joyous parts out of cooking and eating. Yes, meal prep is practical, but it’s also mind-numbingly boring roasting 20 chicken breasts. Every so often, make a completely bonkers recipe, like this one, found in the pages of the Roald Dahl’s Revolting Recipes (Puffin Books 1997 y’all!). It’s Mr. Twit’s Beard Food. Mashed potato base. Hard-boiled egg eyes with black olive pupils. Mushroom nose and ears. Cocktail weenie mouth with rolled bread teeth. A beard of corn flakes, potato sticks, pretzel sticks, peas, baked beans, ketchup, and Swiss cheese cubes. Ridiculous? Forget not the leftover meatloaf sandwich! First, the slice of loaf MUST be at least one-inch thick for maximum effect. Second, the bread should be squishy, not “artisanal” and crusty (this is a meatloaf sandwich, people). Third, there’s no need to get all fancy pants with the other ingredients—greens, mayo, maaaaybe some pickle slices.
