Chicken Salad & Yogurt Dip!
Yoghurt: 15g each fresh mint and dill, 1/2 large cucumber thinly sliced, 450g Greek yogurt, 30ml white wine vinegar and salt and pepper to taste.
Salad: 3 tomatoes, 1/2 cucumber, 1 red pepper, zest and juice of 1 orange, 50g feta, 50ml EV olive oil, 10g fresh mint. Salt and pepper to taste.
Chicken: 4 chicken thighs, skin on and bone in. Season with salt, pepper, paprika and oregano. Sear the skin side down chicken for 5 mins until nice colour. Then flip and bake at 200c for 20 mins.

Tartare Sauce: 50g mayo, 50g Sour cream, 10g parsley, 3-4 gherkins, splash of Worcestershire sauce, 50g Trout caviar, 1 TSP mustard, 1/2 a lemon.
Beer batter cod fillets in 2 heaped TBSP self raising flour, 1 heaped TBSP rice flour or cornflour, 25ml vodka and then season with salt and pepper and gradually add cold beer until you reach a nice thick consistency like in the video. Fry for 6-8 mins at 180c.

Ingredients
Olive oil
Seasoning of your choice
Shallots
Garlic
Method
Preheat the oven to 175°C.
Place the lamb in a roasting dish.
Cover with olive oil, seasoning, shallots, and garlic.
Roast in the oven for 3.5 hours.
Remove from the oven and allow to rest before serving.
To Serve
Slice, serve, and enjoy your perfectly slow-roasted lamb.
