Lemonade Waffles - super light and fluffy 🍋 #igotitfrommy nana @kitchenaidausnz
Ingredients:
* 250 g all-purpose flour
* 2 tbsp sugar (25 g)
* 2 tsp baking powder (10 g)
* ½ tsp baking soda (2 g)
* ¼ tsp salt
* 250 ml buttermilk (or plain yogurt thinned with water)
* 100 ml woodys lemonade (carbonated or still, depending on preference)
* 2 large eggs
* 60 g unsalted butter, melted and slightly cooled
* 1 tsp vanilla extract
* Optional: zest of 1 lemon for extra zing
Instructions:
1. Preheat your waffle iron.
2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. Combine wet ingredients: In another bowl, whisk together buttermilk, lemonade, eggs, melted butter, vanilla, and lemon zest (if using).
4. Combine everything: Pour the wet mixture into the dry ingredients and stir until just combined. Don’t overmix—some lumps are fine.
5. Cook: Lightly grease the waffle iron. Pour in batter (about ½ cup or as needed), close the lid, and cook until golden brown and crisp.
6. Serve: Warm, with syrup, whipped cream, or fresh berries. Dust with icing sugar.

This is one of our favourite recipes from mum. The house smells amazing when this perfect family focaccia to share comes out of the oven.
This dough can be quite sticky to work with so be prepared to get a little messy - which is half of the fun.
1 - Grease a large bowl with good quality olive oil and set aside. Grease and line a baking tray or silicone bread tray and put aside.
2 - Place water, yeast and oil into a bowl and mix until combined.
3 - Add flour and salt, mix until combined and then knead dough.
4 - Place dough into prepared bowl, cover with glad wrap and tea towel and pop aside in a warm place or outside in the sun until doubled in size (this will take about an hour).
5 - Enjoy a glass of wine or champagne whilst you wait (optional…..but always a good idea).
6 - Spread dough on prepared baking tray or mat and with lightly oiled and floured hands press out evenly until the edges meet the edge of the tray. Cover with a clean tea towel and set aside to in a warm spot for another 30 minutes to prove.
7 - Pre heat oven to 195C
8 - lightly press oiled knuckles into the bread to form little grooves.
9 - Scatter fresh Rosemary, halved cherry tomatoes, red onion and salt flakes and then drizzle 2 tablespoons of quality olive oil.
10 - Place in oven for around 35 minutes or until cooked through. Remove from oven and scatter crumbed danish feta or other type of creamy feta on top.
DOUGH
20g good quality olive oil
400grams of warm water
7gms dried instant yeast sachet
500gms of good quality bakers flour
2 tsp Australian Sea Salt flakes
TOPPING
3/4 red onion sliced, 15 cherry tomatoes halved
Fresh Rosemary (as much as you like)
3 tBSP good quality virgin olive oil
Sea Salt Flakes to taste
1/2 cup of crumbled creamy feta.
