We’re proud to get our hands on an allocation of Nakanishi Wagyu, which many say is the pinnacle of Miyazaki beef. Bred by Norihito Nakanishi, whose family has reshaped what Wagyu can be.
While we think Wagyu is about its decadent marbling, the Nakanishi family, in their pursuit of amplifying their stock’s flavour towards mythical proportions, have dedicated their lives and patience to rearing cattle that transcend even their own legacy.
In this special one-day-only gathering, we have Chef Lawrence @kowfuu , the chefs’ chef, to share with us about Nakanishi Wagyu, accompanied by wine selections from @grape.curate .

Whakapiripiri Mai means to gather together in Maori. It’s a nod to a chapter in Olivier Lejeune’s life when he was in New Zealand studying wine science. The picture on the label is a collaboration between two artists he met there, one Croatian, the other Australian. In the same spirit, inside the bottle, Chenins from two vineyards — Les Cailloux and Clos des Plantes — mingle to conjure this soul-giving liquid marvel.
A riot of colours, an oasis of calm and the singularity of a Chenin capable of uniting both: tingling pure like ice pebbles in the mouth, wafts of lilies and honeysuckle, citrus and pears, acacia and baby powder subtly sheaf, unfurl, then atomise to permeate the senses… It’s all dashing, saline, tranquil and delectably quenching.

Maturité — maturity — is often shorthanded as ripeness. It’s in fact far more encompassing than that, but like mineralité (minerality), I’ve finally learned that it’s more a specific character than a generic attribute.
This glorious Chenin by Olivier Lejeune makes a fine specimen to illustrate the idea. It’s youthful, painfully so too perhaps, but is already unequivocally complete; every part of its constitution is maximised yet the whole remains delicately proportionate; the fruit is fulsome and sweet but also taut and sappy; everything is at the very edge beyond which grotesqueness threatens to seep in.
Such craft requires obsessive attention to details, an astute tasting faculty, limitless curiosity and enormous risk-taking. Clos des Plantes’ 2021 Poïèsis is an exquisite tour de force, no doubt, but let’s not overlook Olivier’s work behind the scene: the tireless subservience to his vines, a fanatical discipline in the cellar and his godlike patience. Indeed, a fraction less effort in any of these and this otherworldly expression could not have come about. As hours passed by in the glass, the wine multiplied in stature, texture and depth. The fruit swole up, but along with its accelerative energy too, extending the wine’s levity. An experience. An education. Bravo 👏🏻👏🏻👏🏻
A good wine gladdens the heart, enlivens the spirit, and brings people closer. It needs only be a quenching beverage, an easy complement for your favourite food, and a symbol of your best intentions for the people you’re spending time with. It is to be poured freely — free from obligations, expectations and calculations. When the wine is right, drinking is a wholesome, lighthearted affair.
And this is how it feels to have this bright and crunchy Sangiovese on the table. You sense the sunshine and the breeze, the picturesque charm of a hilly south Tuscany village, and her people’s easygoing, down-to-earth hospitality. Yes, it’s so nice to be around wines like 𝗕𝘂𝗹𝗴𝗮𝗿𝗲𝗹𝗹𝗶, Maria Sole’s mainstay red wine from her family farm 𝗙𝗶𝗰𝗼𝗺𝗼𝗻𝘁𝗮𝗻𝗶𝗻𝗼 in Chiusi, Siena. The wine speaks of a place and culture she grew up in, and Maria is committed to telling the story as plainly as possible. This explains her natural farming discipline and minimum-intervention ethos in the cellar. Bulgarelli is a moreish summation of the estate which distinguishes itself from what one might conventionally refer to as Tuscan red — a lither, nimbler exemplar and one that reveals new shades of savouriness if you keep it in the glass long enough. It is a wine that begs repour, and a marvel, especially for the price.
