Cameron’s first trip to “sunny” Spain 🧡 mainly involved watching his parents stuff their faces with iberico ham, meeting his Spanish family, old friends and coming home with a new nickname from many of the locals “pepino gordo” (fat cucumber) 🫠🧡

What a team I had in the kitchen this year, galvanised, energetic, passionate & driven are just a few words which they exuded. Not enough photos to share the entire team. Pan Fried Scallop on Jerusalem Artichoke Puree with Horseradish Oil : They look fairly innocent in the pictures but these perfectly caramelised little beauties have been seared over a hot, hot flame, by handsome chefs dressed in whites, slaving away on the canapé terrace to enormous theatrical effect... the whole experience is as intoxicating as the crémant and there can be quite a scrum by the time they’re ready to be served!
