1 cup walnut pieces or halves
1 piece (2 inches/5 cm long) cinnamon stick
1 tsp whole cloves
6 green cardamom pods, crushed
2 slices (quarter-size) gingerroot
Liquid honey
1️⃣ In a medium dry skillet over low heat, toast walnuts, stirring often, for 10 minutes or until golden and fragrant.
2️⃣ Transfer to a medium saucepan and add 4 cups (1 L) water. Bring to a boil. Turn off heat and let stand on burner for 10 minutes.
3️⃣ Meanwhile, return skillet to low heat. Add cinnamon stick, cloves and cardamom pods and toast, shaking pan often, for about 5 minutes or until fragrant.
4️⃣ Drain walnuts. Rinse and drain well again. In blender, combine walnuts and 2 cups (500 mL) water. Blend until smooth. Pour into saucepan and add cinnamon mixture and ginger. Bring to a boil. Remove from heat and let stand for 10 minutes.
5️⃣ Strain into teacups. Add honey to taste. Drink hot or let cool slightly. Refrigerate for up to 3 days; warm in a small saucepan.

2 cups unsweetened pomegranate juice
1 strip (6 inches/15 cm long) lemon zest
1⁄2 tsp rose water
1️⃣ In a blender, combine watermelon and pomegranate juice. Blend until smooth.
2️⃣ Twist lemon zest to release essential oils and place in a jar. Add watermelon mixture and rose water. Seal with lid and shake to combine. Refrigerate for up to 3 days if desired and shake to recombine before serving.
3️⃣ Pour into glasses, discarding lemon zest. Serve immediately.

2-cup (500 mL) canning jar
8 oz (250 g) lotus root
2 tbsp (30 mL) finely chopped unpasteurized kimchi
(radish or cabbage type)
1⁄4 tsp kosher or noniodized sea salt
1️⃣ Pour enough water into a medium saucepan to come 2 inches (5 cm) up side. Bring to a simmer.
2️⃣ Trim ends off lotus roots and peel. Immediately immerse in simmering water and cook for 25 to 30 minutes or until tender. Drain and let cool to room temperature.
3️⃣ Cut lotus root into 1⁄8-inch (3 mm) thick slices. In jar, combine lotus root, kimchi and salt. Seal lid and gently shake jar to make sure lotus root is evenly coated with
juice and salt. Cover jar mouth with a paper towel and let stand at room temperature for 24 hours
4️⃣ Remove paper towel and seal jar with lid. Shake vigorously to mix. Refrigerate for at least 2 hours before serving or for up to 1 week.
