Property: SheWolf Pastificio & Bar located on the ground floor of The Selden building Address: 438 Selden St, Detroit, MI 48201 Amenities: House‑milled flour, glass‑walled pasta lab, refined Roman menu, curated Italian wine list, open kitchen design Welcome to SheWolf: a modern Roman pastificio in Detroit’s Cass Corridor that focuses on the craft of flour & pasta. Chef Anthony Lombardo (an Iron Chef Detroit champion and former butcher who has trained throughout Italy) co-owns the restaurant with Tim Ponton and Frank Arcori. Together, they’ve built a one-of-a-kind destination where every grain is milled in-house daily and each savory dish reveals fresh ingredients and rich & balanced flavors. 🌟 A Simple Yet Sophisticated Aesthetic Designed by Ron & Roman with kitchen planning by Great Lakes Culinary Design, the atmosphere is warm & inviting set against an industrial backdrop. Leather banquettes, wine shelves behind glass, polished wood, floor-to-ceiling windows, and minimalist fixtures complement the precise design with understated style. 🌟 A Love Letter to Roman Cuisine From Italian-inspired classics such as cacio e pepe, amatriciana, and carbonara to rotating stars such as Scarpinocc di Patate and Conchiglie Nere, the pasta program serves as an anchor. It all started with a 300 Year Old Barn… The design of Sylvan Table began with the acquisition of a 300-year-old barn from Maine. Using the barn's original design while incorporating industrial textiles, windows and warm woods the menu is complimented with a warm and inviting space. Inside the barn, you will find 2 dining levels, a main level seating area adjacent to the kitchen and a glass roof solarium. The main level kitchen and lower level prep kitchen with support areas are housed within a newly built addition that is perfectly melded with the reconstructed barn. Wood-Fired is the main cooking source, which is used to fuel a large artisanal grill and a pizza oven. Enlisted for a full culinary design, GLCD was brought in to help a new servery that needed to look amazing, provide fantastic choices while being able to hit a dramatically reduced budget. One notable feature was the Utility Distribution System, specified and supplied to allow for equipment adjustments/replacement in the future without any need for heavy construction. Not stopping there, we specified and supplied a fire cement deck oven not only for pizzas but to allow cooking of a vast amount of entrées and sides while provide an amazing showcase pieces for customers to watch and interact with the chefs about. A key component were the beautiful front of house counters, all stainless steel construction for longevity and durability while ensuring any drop-ins, prep refrigeration, warmers were placed to allow easy access and maximize storage. All slim jim trash cans were also allocated and place within the counters with trash chute access to conceal the cans and create efficiency access for the person working that station. Paying homage to John Wayne, the newest lobby bar within the Double Tree in Bloomfield Hills does just that. Throughout the 1930’s, John Wayne diligently and strategically honed his craft. The Duke needed the basics; simple, rustic but able to give a mixologist his tools to show off his perfected craft. Small in foot print but huge in efficiency, the bar equipment designated will be able to perform sophisticated drinks in a shotgun-quick manor. 🍷

The "dive bar" reimagined 🏅 Fully opening garage doors, classic neon, a cement bar top and old school arcade games set this place apart from all other Midtown Detroit locales. We worked within significant back-of-house restraints, and packed one of the smallest kitchens to date with all the firepower necessary to accomplish their fantastic menu. This, paired with the amazing mixology team, results in one of the most unique spots to ingest and imbibe in a welcoming, comfortable setting.

American Hamburger Joint Nostalgia + Clean Lines and Efficient Design = A Recipe For Success Metro Detroit mortgage giant United Wholesale Mortgage contracted GLCD to bring a 1952 Birmingham staple back to life on their corporate campus. We hopped in our DeLorean, put on our paper hats and got to work! The result is a beautiful throwback to the golden age of American fast food. Speed, quality control and product consistency were all center-of-mind when it came to the design—all the staples of a burger joint and shake shack that, decades later, still captivates American taste buds. The opportunity to blend clean lines and modern kitchen tech with tried-and-true processes was particularly rewarding.

Doyles merges Irish warmth with contemporary pub ambiance while offering a dining experience that is unlike the others at the Saint Johns Resort. 🍀🍻⛳ This project involved transforming a previously underutilized space into a compact yet, fully functional efficient kitchen and bar area that is capable of servicing dining rooms on two floors as well as an outdoor patio. Given the spatial constraints, custom-designed stainless-steel work surfaces were essential to meet the operational needs of the restaurant. This required several months of detailed planning, involving continuous redesigns and adjustments right down to the construction phase to ensure the kitchen could effectively support full-service operations. Even the bar area underwent significant changes, with the removal of old equipment and the creation of a new layout that maximized the existing space. To support the restaurant's diverse needs, multiple walk-in coolers were designed for food storage, beverage storage for events, and draft beer systems. This comprehensive redesign balanced functionality and efficiency, resulting in a streamlined and adaptable kitchen and bar setup.

#ThrowbackThursday When you have a music venue, what do you do to speed up service while not interrupting the acts? The name of the game here was draft cocktails—and how to serve them as fast as possible. We helped establish a speedy and efficient bar to hold multiple types of ice cubes while providing quick access to glasses—so that you can pour the cocktails without cocktail shakers flying and disrupting the experience.
