Enjoy live baking demonstrations, samples fresh from the kitchen, and sips of our wines that complement so well with lavender baked goods. Raincoast Copycat Crackers For the Okanagan Valley - Garnet Valley Lavender/Fennel/Hazelnuts 🌷A quick recipe- can freeze the once baked loaves, and use as needed- for fresh, tasty crackers! Adapted from Sue Moran - thank you @theviewfromgreatisland 💐Heat oven to 350F Prepare 4 mini loaf pans (3X5.5in) 🌹In a large bowl- 1 c whole wheat flour 1 c AP flour 1/2 tsp kosher salt 2 tsp baking soda 2 tsp GV lavender 2 tsp fennel seeds 1 Tablespoon finely chopped fresh herbs (rosemary, thyme) 1/4 c pumpkin seeds(pepitas) 1/4 c sesame seeds 1 c dried fruit (apricots, dates, cranberries) 1 c whole nuts (hazelnuts, almonds) Mix together- then add 🌺2 c buttermilk (or 1 1/2 c yogurt with 1/2 c milk) (or 2 c milk + 2 T lemon juice) 1/4 c honey or maple syrup -Mix into dry ingredients, just until combined. Divide into 4 pans Bake 25-30 min, let cool. 🌻Remove from pans, freeze for 2 hours. Slice thinly with a sharp serrated knife 20-30 slices/loaf. Place on a parchment lined sheet pan. Bake at@325 F - 25-30 min, flip halfway. Remove when crispy and brown. 🌸Enjoy with local cheese and a glass of Haywire Pinot Gris. Garnet Valley Lavender Sun Tea-perfect for a sunny day. Easy to make- add 1 tsp GV culinary lavender to 2-3 tsp of your favorite loose tea - for me- Earl Grey all the way! Add cold water, place in the sun, wait for an hour or so. If making in a pitcher- to serve, strain the tea and lavender out. Add honey for sweetness, if needed. Serve over ice with a slice of lemon. The teapot is new for me, from Canadian Tire and will be used all summer. The recipe/idea is from Martha Stewart. Enjoy! The Bloom Lavender event is on the 16/17 May 10-11:30 at Haywire Winery. Strawberry & GV Lavender Drop Cream Scones 🌷Garnet Valley Culinary Lavender- a delicious product that pairs well with lemon, berries, stone fruit, honey & Earl Grey tea. Quick to make, to share with friends. I used a food processor. You could use a bowl, but grind the lemon zest and lavender with the sugar in a mortar and pestle or spice grinder first. Serve with butter and local honey. Go over the top- with jam and whipped cream. Serve with hot tea. Marvel at your delicious scones. Screenshot recipe at the end! Big Dreamy Strawberry/Lemon Vanilla Cake GF For a special birthday, a gathering of a wonderful family. This cake travelled well from Summerland to Banana Leaf in Kits. I iced the cake when slightly warm- to get the petticoat effect (not intentional). Adapted from meaningful eats- this is an excellent recipe. I used Cloud 9 GF flour from Costco. Recipe was doubled, and the 2 cakes were split to make 4 layers. 💐Vanilla GF Cake 350F 2 - 8 or 9 in pans , prepared with parchment and coated sides. In a large bowl- with a paddle attachment 400 g (2 c) sugar 3 eggs Beat 2-3 min until light and fluffy- Add 110 g (1/2c) neutral oil 1 T vanilla 1 tsp kosher salt 1 Tablespoon Baking powder 120 g (1/2c) sour cream 309 g (1 1/4 c) milk Beat until combined- Add 375 g (2 1/2 c) GF flour Mix until combined, divide between 2 pans, smooth top Bake 25 min until golden, no crumbs /temps to 200F Let cool in pan, flip out and cool completely. Let the cakes cool upside down on the cooling rack to flatten tops. If you have time, wrap in plastic and freeze. When you are ready to assemble, carefully split each layer with a serrated knife for 4 layers. 🐥Filling 1/2 recipe Microwave lemon curd (Jan 11-26 post) cooled 1 1/2 c Greek Yogurt 2 T vanilla instant pudding mix Whip together and refrigerate ❤️Vanilla Buttercream 113 g (1/2 c) salted butter, room temp Whip for 3 min until light and fluffy, then add 113 g (1/2c) cream cheese Whip for 2 min more, scrap down Add 480 g (4 c) icing sugar 2 tsp vanilla extract Pinch of kosher salt 1/4 c freeze dried strawberries (finely ground in a spice grinder) Whip together, scrap down, add 2-4 T heavy cream until you have the desired consistency 🍓1 cup Strawberry/Rose Jam -can add 1/2 tsp Rosewater to strawberry jam Mix- may need to add a little water or white vermouth to loosen To assemble- Lay 4 layers out- on 2 divide Lemon yogurt filling, smooth just to the edge. On 3rd layer- spread rose strawberry jam. On a cake board, place 1 of the lemon layers, then strawberry jam layer, then 2nd lemon layer, then the top layer. Ice with the buttercream. I decorated with sparkling sugar, edible roses and edible gold flakes. Enjoy! @meaningfuleats

A taste of summer! Homemade linguine with 2025 Tomato sauce (Keromeos beefsteak) Pasta - Jamie Oliver’s Naked Chef Basic recipe (flour - Nourish Flour, Penticton), eggs (Anna & Mark Termuende- Summerland) And to top off - Rapini - (Localmotive CSA box- Summerland) and - for a treat- Burrata- (Tanto Latte, Salmon Arm) via the Big Cheese Festival (Armstrong) The north and south Okanagan in 1 dish! We are so lucky. 😌 🥚Naked Chef Pasta In a Cuisinart 500 g flour 5 eggs Pulse, then mix until the dough pulls itself together. On a lightly floured surface, finish kneading until smooth. This is a stiff dough. Cover in a bowl, let sit for 1 hour. Divide in 8- proceed to pasta machine. Take pasta to #6, then use a linguine cutter. Fine semolina on the sheet pan, to keep it from sticking. Ensure the pasta water is salted( 1 1/2-2 T kosher salt/4 quarts water/1 lb of pasta). The motor sounds like a sawmill- but it is so fast and a one man job ( Peter ).
