Big Dreamy Strawberry/Lemon Vanilla Cake GF
For a special birthday, a gathering of a wonderful family. This cake travelled well from Summerland to Banana Leaf in Kits. I iced the cake when slightly warm- to get the petticoat effect (not intentional). Adapted from meaningful eats- this is an excellent recipe. I used Cloud 9 GF flour from Costco. Recipe was doubled, and the 2 cakes were split to make 4 layers.
💐Vanilla GF Cake
350F 2 - 8 or 9 in pans , prepared with parchment and coated sides. In a large bowl- with a paddle attachment
400 g (2 c) sugar
3 eggs
Beat 2-3 min until light and fluffy- Add
110 g (1/2c) neutral oil
1 T vanilla
1 tsp kosher salt
1 Tablespoon Baking powder
120 g (1/2c) sour cream
309 g (1 1/4 c) milk
Beat until combined- Add
375 g (2 1/2 c) GF flour
Mix until combined, divide between 2 pans, smooth top
Bake 25 min until golden, no crumbs /temps to 200F
Let cool in pan, flip out and cool completely. Let the cakes cool upside down on the cooling rack to flatten tops. If you have time, wrap in plastic and freeze. When you are ready to assemble, carefully split each layer with a serrated knife for 4 layers.
🐥Filling
1/2 recipe Microwave lemon curd (Jan 11-26 post) cooled
1 1/2 c Greek Yogurt
2 T vanilla instant pudding mix
Whip together and refrigerate
❤️Vanilla Buttercream
113 g (1/2 c) salted butter, room temp
Whip for 3 min until light and fluffy, then add
113 g (1/2c) cream cheese
Whip for 2 min more, scrap down
Add
480 g (4 c) icing sugar
2 tsp vanilla extract
Pinch of kosher salt
1/4 c freeze dried strawberries (finely ground in a spice grinder)
Whip together, scrap down, add
2-4 T heavy cream until you have the desired consistency
🍓1 cup Strawberry/Rose Jam
-can add 1/2 tsp Rosewater to strawberry jam
Mix- may need to add a little water or white vermouth to loosen To assemble-
Lay 4 layers out- on 2 divide Lemon yogurt filling, smooth just to the edge. On 3rd layer- spread rose strawberry jam.
On a cake board, place 1 of the lemon layers, then strawberry jam layer, then 2nd lemon layer, then the top layer.
Ice with the buttercream.
I decorated with sparkling sugar, edible roses and edible gold flakes.
