Malt is one of the biggest foundations of any beer, but can be overlooked.
At BeerX 2026, we caught up with Jamie from Simpsons Malt to ask a few questions brewers regularly run into when choosing malt for their recipes.
In this video we cover:
• Common mistakes when choosing base malt • How malt choice can impact brewhouse efficiency
• Signs a brewer may be using the wrong malt • Why malt still matters in hop-forward beers • Consistency between crop years and suppliers
Jamie also explains why cheap malt can end up costing more in the long run, and why consistency is one of the biggest advantages when building reliable recipes.
Whether you’re a homebrewer or running a commercial brewery, there’s plenty of useful insight in this one.
Great head retention isn’t an afterthought — it’s built into your recipe from the very start. 🍻
A well-formed, lasting head doesn’t just look the part, it helps carry aroma, enhances mouthfeel, and elevates the overall drinking experience. The good news? It doesn’t take much to get it right.
A small addition of wheat malt can significantly improve foam structure, while carapils works quietly in the background to support head stability — all without impacting flavour. Simple adjustments, meaningful results. It’s a considered approach. Thoughtful brewing, better beer.

Tilt & Pour Helles Lager 5.2% abv. A take on the infamous German Lager. Helles 5.2% has a crisp clean body, with balanced bitterness and just enough sweetness to keep you coming back for more regardless of the weather… @tiltnpour
Cleaning and sanitising are not the same thing — and treating them like they are is where most brewing problems start.
Cleaning removes the grime you can see. Sanitising deals with what you can’t. One without the other leaves gaps that yeast (and bacteria) will happily fill.
Get the order right, and you remove a lot of guesswork from your beer.

🍺 We teamed up with Fermentis and Dundalk Bay Brewery & Distillery to put the new SafBrew™ LA-02 to the test in a brand new Brewer Stories episode.
As the demand for quality NOLO beers continues to grow, this collaboration explores how brewers can achieve lower ABVs without compromising on flavour, aroma, or drinkability.
Known for their award-winning 0.0 Nitro Stout and non-alcoholic range, Dundalk Bay Brewery shared their experience using SafBrew™ LA-01 and the latest innovation, SafBrew™ LA-02 — a new Torulaspora delbrueckii strain designed for a wide range of NOLO beer styles with no phenolic off-flavours.

We spoke with James Wilson from Fermentis to dig into one of the most important parts of your brewing journey — yeast.
It’s often overlooked, but yeast is where wort becomes beer. It drives fermentation, shapes flavour, and defines the final profile in the glass.
Once your malt and hops are in place, yeast does the real transformation work — and consistency here is everything.
Good quality yeast isn’t optional — it’s non-negotiable in your brewing process.

Most “homebrewed” flavours don’t come from your recipe — they come from fermentation temperature.
Yeast is doing the real work, and how you manage temperature shapes everything: flavour, aroma, and overall balance. Keep it steady, keep it within range, and you’ll notice the difference immediately. It’s a small change that separates good beer from consistently great beer.

We caught up with Robbie Harrigan from Yakima Chief to ask a few questions that matter when you’re aiming to brew better beer.
Because once your malt is set, it’s the hops that shape expression — aroma, bitterness, character, balance.
Great beer doesn’t happen by accident. It’s built on consistency, and that starts with quality at every stage.
Good quality hops aren’t optional — they’re non-negotiable.
