Oh wow! Look what I just got in the mail! Some @foustmans cured, nitrate/nitrite-free dry salami. Guys they use curing agents like celery powder not chemicals to preserve and season their salami! Based in Watsonville and produced by four generations of Italian heritage artisans. So much variety, just for starters, Pork (Fennel, Cabernet, Hot Toscano), Beef (Original, Spicy), Lamb (Rosemary, Garlic), and Turkey. Plant based casing. You can buy online directly.
