WENS, LEEDS There are some places people keep recommending and @wensrestaurantleeds was one of them. Sitting just off the main streets in Leeds city centre, it’s super easy to get to on foot from pretty much anywhere and honestly, it lives up to the hype. We had some of the best Chinese food we’ve eaten in Leeds here. We ordered: • Minced Chicken Pan-Fried Dumplings • Crispy Deep-Fried Pork in Sweet Vinegar Sauce • Egg Fried Rice • Kung Pao Chicken • Dan Dan Noodles • Salt & Pepper Chicken • Stir-Fried Beef Noodles • Pork Xiao Long Bao • Slow-Cooked Beef Brisket in Curry Sauce The atmosphere was great and the staff were genuinely friendly. It’s regularly busy, we’ve been back since and were lucky to get a table, which is always a good sign. We first went as a little celebration before our wedding with a friend and it really felt like one. Every dish landed but the Xiao Long Bao and Dan Dan noodles were definite standouts. Nizami Chicken Curry has to be one of the easiest curries we’ve ever made. This curry feels rich, elegant and deeply comforting all at once. 12 to 15 cashews or almonds 4 tbsp vegetable oil or ghee 4 green cardamom pods, lightly bruised 4 cloves 1 x 2.5cm (1 in) cinnamon stick 1 bay leaf 2 large onions, thinly sliced 2 tbsp ginger-garlic paste 1 tsp Kashmiri chilli powder 2 tsp turmeric 2 tsp ground coriander 1kg chicken thighs and/or legs (bone-in, skinless) 1 cup full-fat plain yoghurt, whisked Salt to taste ½ tsp garam masala Fresh coriander and fried onions 1. Make a nut paste by blending the almonds and/or cashews with just enough water to make a thick paste. If you don’t have a strong blender, soaking the nuts in water for 30 minutes will soften them. Set aside. 2. Heat oil or ghee in a heavy pan over medium heat. When bubbly hot, stir in the whole spices and allow them to infuse for about 30 seconds. 3. Add onions and one tsp salt and fry for about 10 minutes or until golden brown. Remove half for garnish and set aside. 4. Stir the garlic and ginger paste into the remaining onions in the pan and fry for a further 30 seconds. Now stir in the ground spices spices to coat the onion mixture. 5. Add chicken and brown lightly. A couple of minutes should do. 6. Add the yoghurt gradually, one tablespoon at a time while stirring continuously. Then stir in the nut paste and cook over the medium heat until the oil separates. 7. Cover and simmer for 20 minutes until chicken is tender. 8. To finish sprinkle in the garam masala and garnish with the reserved fried onions.
