Hey everyone, if you have been looking for an âeasy drinkerâ, the excellent coffee from Oaxaca Yoloxochitlan âCrown Jewelâ sourced by Royal is back! As impressive as ever, we taste plum, butterscotch, and milk chocolate. As always with these coffees, our supply is limited. The roast on this is medium, with a full development.
Have you ever tried an anaerobic co-ferment coffee? Itâs a process done on the green coffee at the coffee farm, leading to intensified winey and fruit flavors in your cup. Edwin Noreñaâs Red Fruits displays a fragrance and aroma of strawberry, cherry and pear. Flavor notes of dark chocolate, strawberry and other red fruits with a clean and unique aftertaste of pomegranate and cherry. Bright green apple acidity and a medium body with silky mouthfeel. The âred fruitsâ co-fermentation by Edwin Noreña is achieved by an initial carbonic macerated fermentation with 40% coffee mossto and 60% strawberry mossto. This infusion of strawberry must is allowed to ferment with the coffee for 48 hours. After this initial carbonic maceration fermentation, the coffee cherries are depulped and put back into the vessels for a second carbonic maceration fermentation with only the coffee mossto for 24 hours. Coffee is then dried in its mucilage (fruit pulp) for 18-20 days to finish.
