Having a tough month means appreciating the bright spots all the more! 💜 Thinking back to a few weeks ago when @forageseattle and I took a lil adventure to a favorite coastal foraging spot. After traversing some slippery coastline, we had an epic day harvesting uni (that we HAD to sample with homemade ponzu on the beach), mussels, and gooseneck barnacles. And despite it POURING in Seattle, we were met with surprisingly calm weather! It’s the little things sometimes. Here’s some of the things my husband and I made once I returned with the harvest: 🔸 uni hand rolls with coho salmon roe, shiso leaf, cucumber, and avocado 🔸 blanched gooseneck barnacles with garlic and meyer lemon aioli (thanks to @forageseattle for the lemons!) 🔸 mussels in red thai curry with galangal and lemongrass, served with a homemade crusty bread Can’t wait for the next round of spring low tides! — 🕰️ late march 🦪 pacific purple sea urchin | strongylocentrotus purpuratus 🦪 pacific gooseneck barnacle | pollicipes elegans 🦪 california mussel | mytilus californianus

Snapshots from a shellfishing mission with @forageseattle , who also brought the 🍋 MOST FLAVORFUL LEMONS EVER 🍋 to put on our oysters, homegrown by her friend. I can’t compete with that, but did bring some garden chives to add as a topping! It felt so good to be back in Washington’s clam beds and kick off shellfishing season–and we haven’t even hit good spring low tides yet! Think mushroom season ends with fall? Think again! One of our favorite winter treasures in WA forests is the Yellowfoot Chanterelle (aka winter chanterelle). 👇 How to ID Yellowfoot Chanterelles: 🔸 Slender, hollow stem 🔸 Golden-yellow to orange tones 🔸 Wrinkled or forked false gills (not sharp true gills!) 🔸 Mild, earthy aroma 🔸 Often found in clusters, hiding in mossy conifer forests 🔸 Grows off of dead wood or wood duff, not directly from the ground 🌧️ When they fruit: late fall through winter 🌲 Where they thrive: damp, coastal & low-elevation forests after steady rains (perfect timing, right?) Heading to Mt. Rainier? This is the perfect base for your mountain adventures! 🏔️ ➡️share with someone you want to explore more of Washington’s small towns with and be sure to follow @theadventuringandrews for all the best weekend adventures here in Washington state! 📌save for future planning! (Some of the captions in the video wouldn’t let me change them- guess we’re Tamania now 😆) 📍Packwood, WA The town was established in 1890 with the first post office here and was later renamed several times. It grew due to logging opportunities and then grew in popularity due to its proximity to so many beautiful places nearby and outdoor recreation opportunities! 🚘 2.5 hours from Seattle 🏡Where to stay? @thepeakmotel , the cutest and newly renovated Airbnb with several different units perfect for couples and some bigger ones that are great if you’re traveling with family or friends.. They’re dog friendly too 🐶 *hosted ⛅️ best time to visit? The town itself would be fun in any weather, but for the best weather to explore the surrounding area and for the snow to have melted, I would suggest mid July-early October For skiing and snow activities, you’ll want to visit January-March 🥾what to do in the surrounding area? summer: hike hike hike! Skyline Loop, Packwood Lake, Naches Peak, Sheep Lake- there are so many great trails to check out to see wildflowers and beautiful views In the fall: check out some of the underrated trails perfect for rainy weather such as Silver Falls, Twin Firs Trail, Rampart Ridge, and be sure to check out Gifford Pinchot! Mushroom foraging is also very popular here this time of year. Check out @forageseattle for all the best tours to get in the woods and learn all about the mushrooms of the PNW 🍄*hosted spring/winter: snowshoeing at Panorama Point! Check out the White Pass ski area for skiing and snowboarding, and there’s also activities like snowsledding in the area 🎿 ☕️where to eat? This is one of the most unique activities I’ve done in Washington so far 👀🍄👇 Be sure to follow @theadventuringandrews for all the best adventures in Washington! ☺️ This past weekend, I joined a mushroom foraging class to head into the woods in Gifford Pinchot National Forest near Mt. Rainier, and it was so fascinating and informative 🏔️🍄 We went with @forageseattle and spent Sunday morning deep in the woods (hosted) learning all about the various kinds of mushrooms, how to harvest them, clean and cook them, and how to find the best spots to look for them! Here’s everything you need to know to book this tour 👇👇 Forage Seattle offers several different experiences from foraging + cooking classes to oyster and clam digs and mushroom foraging 101 🍄We took the “Crazy for Chanterelles Hunt” 📍Randle, WA 💲cost per person is $239; however, they do offer cheaper tours that also meet closer to the city if you’re interested in that as well! ⏰4 hours, small groups of 8-10 people 🧥You’ll want to dress in layers, bring a backpack with some water and snacks, wearing waterproof pants and waterproof boots would be helpful regardless of weather as you’ll be walking through lots of brush 📅The next available meetup for this specific tour will be the weekend of November 15th & 16th The best time for peak mushroom growth is fall! ☕️Coffee and small snacks are provided at the beginning ✅They do have an option to purchase the coordinates and get instructions for $95 if you’re looking to go on your own 🦺You will be asked to wear a safety vest while in the woods and you will be given a bag to collect mushrooms to take home and a whistle. Walking sticks are also provided in case you need one Not shown above are a few other mushrooms we found like the hedgehog known for its “teeth” on the underside of its cap, dyer’s polypore which is often used to dye textiles and Russulas which are the most common mushroom found in the PNW! A few weeks ago whilst in Seattle I joined some other mushroom foraging newbies for a walk in the wonderfully quiet woods (about 2 hours from the city) to hunt for fungi. During a nourishing meal of mushroom risotto, prepared forest-side, the pros @forageseattle walked us through the foraging process, from where to find the gems on the forest floor, to how to identify the ‘shrooms we were looking for — lobster and chanterelles — and delicately pluck them. We donated that day’s haul to a local chef who serves monthly community meals, but I did bring home some dried mushrooms to try. Tonight, we ate! Following @aubreyshealthykitchen ’s Lobster Mushroom recipe, I rehydrated the mushrooms, sautéed ‘em, made a decadent cream sauce and served with spaghetti. Delish! A taste of Seattle here in Tampa.
