All you need is:
Wet ingredients:
🍌3 ripe bananas
🥚2 eggs
1 cup Greek yogurt @foragerproject
1 teaspoon vanilla extract
🍯1/4 cup honey
Dry ingredients:
2 cups oats for oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 scoop protein powder
1 cup chocolate chips
Blend the oats until they form a fine flour and set aside. In a large bowl, mash the bananas until smooth. Add the eggs, Greek yogurt, vanilla extract, and honey, and mix until well combined.
Stir in the oat flour, baking powder, baking soda, and protein powder until a batter forms. Fold in the chocolate chips.
Line or grease a muffin tin and evenly divide the batter. Bake at 350°F for 22–25 minutes, or until a toothpick comes out clean.
Let cool slightly… then enjoy warm 🤍
