The last 48 hours have been the wildest roller coaster I've ever been on. The highest of highs from being featured on @eater_la , something I never thought would happen in my life to getting a call from the county to congratulate me on said article and to kindly let me know that I have outgrown my permits and I was to shut down pizza production. You may have some questions:
Q: What does this mean?
A: It means another pivot to keep Focaccia Boi up and running.
Taking more time to hunt for the perfect brick and mortar restaurant.
Expanded wholesale (as soon as I'm good with the county).
No more pizza for the time being.
More bread pop ups!
It means the Focaccia Fortress is now closed to the public.

I am truly grateful for all of you and the support you’ve given me. I still have so many emotions to sort through at this time but I have a feeling that there is a permanent/semi permanent solution on the horizon.

A badass friend brought me some brick cheese straight from the Midwest, tbh I've never had brick cheese (I know I'm a fraud). I was so pleased how it melted and crisped up as if molded to the waves of focaccia. The slightly salty crunch as your teeth sank past the lacy cheese is such a sensational texture. Then the salt melts to a creamy butter and olive rich dough melange as the cheese oozed into the dimples of the moon like surface of the focaccia.
