Appreciation post - part I❣️
One year ago we started our floral collaboration with the wonderful @mariliispiik of @floart.ee - and what a journey it has been. Always ready to push boundaries in the name of beauty, always striving to create something unique. And I hope we have established that sometimes beauty lies in the quiet repetition of just one flower. Its like the “tintinnabuli style” of floral art we carry close to our hearts.
Hospitality always goes both ways. We are deeply grateful to our guests who inspire us to create and always go further and deeper. We love to craft big feelings in a minimal form. Creating the vibe of a kitchen table, made of stainless steel - less fuss and more values. Industrial yet warm and soulful.
We love sustainable hedonism. The leeks will be in your next consomme and vichyssoise. The flowers were given to the guests to take home. We use wild plants in all of our dishes and of course we could never do it without our dear forager the plant wizard @allikas.maret . We use unagi technique on catfish instead of the unfortunately disappearing eel. We picked chairs from an old restaurant storage room. The sleek stainless steel table you will be seeing again as our next chef’s table.
