Hayao Miyazaki has created many aesthetically beautiful animated films. His imagination is a thrill to grip. I had time this year to revisit some of Miyazaki’s classics. Kiki from “Kiki’s Delivery Service” is a witch that was ready for the world, realized the world had unforeseen obstacles and she was discouraged and lost her witch powers. She regained her abilities thanks to the bonds she created with some people. I was intrigued by a dish she helped make, a “fish herring pie”. A fish pie with squash and olives?
To start off with the base of a fish herring pie, I infused aquavit with wakame. To remind us of pastry that supports it all together I created a caramel, nutmeg, vanilla syrup paired with kabocha. The last ingredient in my mixer is an egg, most pies require eggs and so will this drink. The drink is garnished with smoked Kalamata salt. This drink has the front notes of sweet seaweed that’s later followed by warm spices and a beautiful velvety texture, before sipping take a whiff of sweet smoked olives. Cheers y’all!

Blue wonders
I was looking at the “Awa, Naruto No Fuha” painting and I really wanted to create a cocktail that captures the ocean. My first encounter with oceanic flavors was through oysters, the notes of minerals and salinity is a gift from the seas. My drink revolves around two separate entities (base and foam) dancing together .
I pretty much broke down how the oyster is served which is with a side of cocktail sauce, citrus, and peppers. I juiced yellow peppers and tomatos, my amazing friend @emmanuel_rosario had the idea of blending acids and dem to make a shrub. To bring out more salty flavors I infused cerignola with aquavit. Since I was inspired by Japanese art I used Japanese gin, I wanted a citrus forward gin, Roku gin fit the bill. I combine the two spirits and add blue spirulina. I created a foam that consist of 3 different citrus oils and oyster shell Wray & Nephew cordial.
This drink is citrus forward, refreshing. Quite proud of it. Cheers to the ocean and it’s “Blue wonders”.
Base: Olives, juniper, tomatoes, fresh bell peppers, caraway, citrus.

“Raven’s egg nog”
We’re kicking off our 6 weeks of egg nog @peche_austin with a bright, fruitful, and luscious egg nog inspired by “The Raven “ written by my sad homie Edgar Allen Poe. Poe was known for drinking egg nog and his spirit of choice was brandy. I used pomegranate because it’s associated with misfortune, just like ravens. “Robin Van Gogh” - Van Gogh has compared himself to a bird trapped in a cage. Well, this cocktail inspired by him flocked really well! Vincent was a Dutch man so I used Genever(it’s Dutch).Van Gogh painted a couple of stills of pears so I used spiced pear liqueur. Van Gogh is alway connected to absinthe so I used a hibiscus/ vanilla/ almond infused absinthe. All artist are passionate so I used passionfruit syrup.
