Took a while to set up the mussels 😅 Without doubt my favourite way to cook and celebrate our amazing mussels. Served with brown butter, sherry vinegar, dried sugar kelp & fresh pepper dulse from the beautiful @car_y_mor . These biodiversity enhancing sustainable AF rope grown mussels were fire! I went full takeover at @bridgekebabs with my @caernarfonkebabs brothers – family since 1991! 💥 We threw a whole @damaramonuk Fat-Tailed lamb on the döner spit. After a 24hr marinade. That glorious tail fat rendering slowly on top making this kebab a self-lubricating masterpiece. Drip drip drip 💦💦💦💦💦
This is the only Flaming Feasts recipe I didn’t cook over live fire, so I introduced a beautiful subtle smoky hit with a spritz mix of @halenmon Smoked Water, rich stock & sharp vinegar. BOOM!
And the salad? Never a bland side hustle. I handpicked every leaf, veg & herb with Sam @llysiau_menai – making it worthy of the lamb it’s standing beside.

A bucket list moment for me today #FlamingFeasts 11:30am BBC1 UK, paying homage to the man who showed me the magic of the land - Cynan Jones MY HERO! I owe a lot to Cynan, Amy and I bonded through foraging and led to 4 kids haha 🍄🍄🟫🥰 DIOLCH CYNAN 💖 (he was a bit disappointed I didn’t serve him a steak with the shrooms hehe)

WAY MORE THAN A COOKOUT ❤️🔥💘 We recreated a famous whole cow feast that the village of Llanberis held in 1954 to celebrate the end of wartime rationing. Three locals who were kids back then (slide 2) came to share their stories and memories of ‘54 and to enjoy our recreation - a very special moment. We fed hundreds of people, from toddlers to 90+ year olds. This wasn’t just about feeding people - it was about creating new memories for future generations. And the beef... We cooked that Llangristiolus Welsh Black for 30 hours, and it was spectacular!
