I need these Whole Grain Einkorn Biscuits on tap! They are so simple to make. Here’s the recipe ❤️ INGREDIENTES 336 g Whole Grain Einkorn Flour - I buy from @dutchmeadowsfarm 1½ teaspoons baking powder ½ teaspoon baking soda 1 teaspoon fine sea salt - @redmondrealsalt 1 stick or 8 tablespoons frozen butter - my fav right now is from @finlandia.cheese ¾ cup cold buttermilk - @fiveacrefarms INSTRUCTIONS - Preheat the oven to 425° Mix flour, baking powder, baking soda, and salt in a large bowl. Grate your frozen stick of butter into the bowl. PRO TIP - salted or unsalted butter is fine. I use salted just make sure it is FROZEN. This helps with the flaky texture. Use a pastry cutter to “cut” and “mix” the butter into the flour mix until well incorporated, should look like coarse meal. PRO TIP - use what you have on hand. I do not have a pastry cutter, I used an apple slicer and it works like a charm. Pour the cold buttermilk into the bowl. Mix and squeeze the dough with your hands until it holds together and has absorbed the buttermilk. Form into a ball and cover tightly. I prefer not to use plastic but as long as it’s not touching the dough, you’re fine. Store in the refrigerator for half hour. Dust some flour unto your surface and rolling pin. Roll the dough into a rectangle, then fold in half, then fold in half again creating a square. You will want to do roll and fold it this way, 3 to 4 times to create a flaky texture. To create your biscuits, roll out one final time into a 1inch thick rectangle. I always eyeball it and they come out great. Use your biscuit cutter to cut out 9 to 12 biscuits. PRO TIP - I don’t have a biscuit cutter, I use a mason jar lid and it works perfect. A glass cup works well too. Just make sure you don’t actually “CUT” your biscuit by wiggling the biscuit cutter or cup. It will prevent your biscuits from rising! Place your biscuits on a baking sheet, no need to grease it. Bake for 18 to 20 minutes. These freeze and refrigerate really well and come to life with just warming them back in the oven on low for about 5 to 10 mins. 🙌🏼 SAVE this for later and let me know if you try them! Please enjoy. A behind the scenes day: from warehouse to greenhouse with students from @columbia . We walked through our dairy warehouse in NY, then out to the fields of @waldingfieldfarmct in CT. There’s nothing like seeing how local businesses feed and fuel their communities 💪💪
