Yes, the fish is important, I place a lot of emphasis on dry-aging fish but just as much if not more attention is given to the rice as well, maybe even a 60/40 perhaps. If the rice on that nigiri is shit, doesn't matter how good that fish is, that nigiri is pretty much as good as shit. đ
After closing down the business and taking a year and so off, I have decided to relaunch Tenko as a private in-home dining only where I bring an approximately ~21 course omakase dinner thatâs mainly focused on my dry-aged fish and nigiriâs to your house or venue of your choice.
As this is no longer run as a business but as a passion project where I try to offer what I think to be the very best ingredients and fish preparation, I am fairly strict in what I offer. This is kind of my way of giving back and spoil the people that has supported me the last 5-6years while i try to pick myself up from rock bottom and my roaster coaster ride.
- Approx 21 course âhomakaseâ featuring a wide variety of seasonal Japanese fish thatâs been through my dry-age program
- Due to the extreme small nature of operation and extensive use of artisanal ingredients certain dietary restrictions can not be accommodated(rice, soy, gluten, fish, etc but shellfish is ok)
- Minimum 4 guest and up to maximum of 8
- Please have photos/videos of your kitchen/dining room setup
- All dinner-ware and settings(even glassware) is provided, only thing not provided is beverages
- Allow 3-3.5hour for dinner
- Travel fee applies if outside of roseville-sacramento area
- Schedule is limited as Iâm out of country months at a time
- Allow 3-4 weeks advance notice as most fish items needs a certain amount of time to dry-age to prime status
- All of my former customers that has dined with me are welcome to book me anytime and your referrals
- New customers will need to contact/have to meet me in person first and go through a brief questionnaire
- Due to physical limitations I can only accept one booking per month
