Our Easter Egg Chocolate Amasi Cake is proof that the best bakes start with the basics 🍰 Our guest - TV presenter and cookbook author Marinda Engelbrecht - prefers using First Choice Amasi. It doesn't just add tang, it makes for a chocolate cake that stays fresh all weekend...(if it lasts that long)😋 For more from Marinda, follow @marindakook EASTER EGG CHOCOLATE AMASI CAKE Ingredients: For the Cake: • 2 C cake flour • ¾ C cocoa powder • 2 C white sugar • 2 tsp baking powder • 1½ tsp baking soda • 1 tsp salt • 1 C oil (sunflower or canola) • 3 large eggs, room temperature • 1½ C First Choice Full Cream Amasi • ½ C boiling water For the Chocolate Buttercream: • 250g First Choice Butter, room temperature • ½ C cocoa powder, sifted • 3½ / 4 C icing sugar, sifted • 2–3 Tbsp First Choice Cream or Full Cream Milk • 1 tsp vanilla extract • A pinch of salt • Optional: 100g dark chocolate, melted and cooled Directions: For the Cake: 1. Preheat oven to 180°C. Grease and line two 20cm round cake tins. 2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda and salt. Stir in sugar. 3. In a separate bowl, whisk oil, eggs and First Choice Full Cream Amasi until smooth. 4. Pour wet ingredients into dry ingredients and mix until just combined. 5. Add boiling water and mix gently. The batter will be thin - this ensures a moist crumb. 6. Divide evenly between tins. 7. Bake for 30–35 minutes or until a skewer comes out clean. 8. Cool in tins for 10 minutes, then turn out onto a wire rack to cool completely. For the Buttercream: 1. Beat the butter on medium-high speed for 4 minutes. 2. Add sifted cocoa powder and beat until fully incorporated. 3. Gradually add icing sugar, one cup at a time, beating well between additions. 4. Add vanilla, salt and 2 Tbsp First Choice Cream. Beat on high for 3-5 minutes, until light and fluffy. 5. Optional: Fold in melted dark chocolate for an ultra-luxurious finish. 6. Adjust consistency with additional cream if needed. Assemble: 1. Level cake layers if needed. 2. Spread a generous layer of buttercream between layers. 3. Cover the outside of the cake. 4. Decorate with Easter eggs and fresh flowers. Happy Easter!

A true South African classic that tastes like home 🍞 AMASI CRUNCH CORN LOAF Ingredients: * 3 C Self-raising flour * 1 C First Choice Amasi * 3 large eggs, whisked * 1 C sweetcorn (fresh kernels or creamed style) * 2 Tbsp First Choice Butter, melted * 1 C First Choice Cheddar Cheese, grated * 2 Tbsp brown sugar * 1 Tbsp dried parsley (optional) * pinch of salt Directions: 1. Preheat the oven to 180°C. Grease and flour a loaf tin. 2. In a large bowl, mix the flour, cheese, sugar, parsley, salt and corn. 3. Add Amasi, whisked eggs and melted butter to the dry ingredients. Mix until combined, don't over-mix. 4. Pour into the pan and bake for 40–60 minutes. Let it cool slightly before serving with lots of butter!

It’s high-protein, zero-stress and melt in your mouth delicious 😋 HIGH PROTEIN COTTAGE CHEESE FUDGE Ingredients: * 2 x 250g tubs First Choice Smooth Cottage Cheese, plain * 160g milk chocolate * 160g dark chocolate Directions: 1. Melt the chocolate. 2. Combine the melted chocolate with the cottage cheese into a blender. 3. Pour the mixture into a lined baking tray and refrigerate for at least 3 hours until firm. Serve and enjoy!

Pure Bliss in every slice 🍫 CHOCOLATE CHEESE SNACK CAKE Ingredients: * 1L First Choice Double Cream Chocolate Cheesecake Dairy Snack * 3-4 eggs * 80g cornstarch * 40g cocoa powder * 1 tsp baking powder * 100g sugar * 1/2 tsp vanilla essence * 160g chocolate drops Directions: 1. Mix all ingredients, sprinkle 80g of the chocolate drops on top. 2. Bake at 180°C for about 60 minutes. 3. The cheesecake should be wobbly like jelly, but still hold its shape. 4. Let the cheesecake cool first before putting it in the fridge. 5. Refrigerate at least 4 hours (overnight is best).

The most deliciously fresh high-protein dish 👌 TZATZIKI CHICKEN & CHICKPEA RECIPE (Serves 2) Ingredients for the chicken: * 500 g chicken breasts, cut into bite-sized pieces * 2 Tbsp First Choice Double Cream Dairy Snack, Plain * 1 Tbsp oil * 1 tsp paprika * 1 tsp garlic (fresh or powder) * ½ tsp cumin * ½ tsp salt * ½ tsp black pepper Ingredients for the chickpeas: * 1 tin chickpeas, drained and rinsed * 1 Tbsp oil * ½ tsp paprika * ½ tsp cumin * Salt to taste Ingredients for the tzatziki sauce: * 1½ C First Choice Double Cream Dairy Snack, Plain * 1–2 cloves garlic, crushed * 1 Tbsp lemon juice * 1 tsp olive oil * Himalayan salt to taste * Dill, finely chopped Directions for the tzatziki: 1. In a bowl, add the dairy snack, garlic, lemon juice, olive oil and salt. Mix until smooth. 2. Chill in the refrigerator while preparing the rest of the dish. Directions for the chickpeas: 1. Heat the oil in a pan over medium heat. Add the chickpeas, paprika, cumin and salt. 2. Cook until golden and crispy. Remove from heat and set aside. Directions for the chicken: 1. In a bowl, coat the chicken with dairy snack, oil and spices. 2. Fry the chicken in a hot pan or grill until golden brown and cooked through. Allow the chicken to rest for a few minutes before serving. Assembly: 1. Layer the tzatziki, chicken, chickpeas and garnish! Enjoy!

Rich, soft and irresistible to stop at just one. Ingredients: Brownie Base: * 200g dark chocolate * 150g First Choice Butter * ¾ C sugar * 2 eggs * 1 tsp vanilla essence * ¾ C flour * ¼ C cocoa powder * ½ tsp baking powder * pinch of salt Dairy Snack Layer: * 2 C Double Cream Tiramisu Dairy Snack * 2 tsp instant coffee, dissolved in 1 Tbsp hot water * 2 Tbsp icing sugar * ½ tsp vanilla essence Topping: * cocoa powder, for dusting * grated chocolate Directions: 1. Preheat oven to 180°C. 2. Line a square baking tin with baking paper. 3. Melt the chocolate and butter together until smooth. Allow to cool slightly, then whisk in sugar, eggs and vanilla. Fold in flour, cocoa powder, baking powder and salt until just combined. 4. Pour the batter into the prepared tin and spread evenly. Bake for 20–25 minutes, or until just set but still fudgy. Allow to cool completely. Prepare the Dairy Snack Layer: 1. In a bowl, mix the dairy snack with dissolved coffee, icing sugar and vanilla until smooth and creamy. 2. Spread the dairy snack mixture evenly over the cooled brownies. Smooth the top with a spatula. 3. Refrigerate for 2–3 hours to allow the layers to set. Dust generously with cocoa powder and add grated chocolate if desired. Serve & Enjoy! #FirstChoiceSA #TheGoodChoice
