We’re excited to highlight two of the speakers joining our “HACCP & Compliance Workshop for Brewers” on Wednesday, April 15. This session goes beyond theory, offering practical guidance, real-world insights, and a chance to work through your own HACCP plan with input from industry experts.
Rashel Hudson is the Founder and CEO of @fireflybrew , a Tulsa-based brewery launched in 2020 out of her garage. With years dedicated to fermentation science, Rashel brings deep technical expertise in SCOBY biology and fermentation dynamics, paired with hands-on production experience and industry mentorship.
Joining her is Elle Zisumbo, Firefly’s COO, who leads operations, financial planning, and the company’s co-packing division. Together, they helped scale Firefly Brew into a 23,000 sq. ft. manufacturing facility and developed a production model that supports both in-house products and partner beverage brands, bridging technical fermentation knowledge with operational execution.
