A plant tells its story if you learn its language. It starts with the leaves: there are mobile nutrients (N, Mg, K) that move from older leaves to feed new growth, while immobile ones (Ca, B) stay put. If old leaves fade yellow but new ones shine, the plant is reallocating the nutrients it has. If new leaves show deficiency, it’s not sourcing enough of what can’t move. When both, old and new, look clean and strong, the system is in balance and sourcing enough to thrive! Then read the body language: broad leaves often reflect good hydration and active growth, while thin or reduced leaves can hint to lack of resources or regulation to conditions. Color and finish on mature leaves express and communicate too—deep, even green with a soft matte sheen is the sweet spot; too dull signals low vigor, too shiny can point to stress or imbalance. Other plant-empathy insights: steady flushes, good turgor, balanced internodes, stem thickness, a canopy that breathes. Those are the basics in plant expressions —now, go outside and talk with Coffee Trees- let the field speak!!! #CoffeeInspiration #RegenerativeCoffee #SpecialtyCoffee #AtitlanVolcanoCoffeeRegion

Old orchard wisdom insists the ground be scraped clean and bare around every plant—no weeds, no cover, no competition—believing any green growth would steal water, nutrients, and yield. In our volcanic soils, sloapy terrain and tropical weather context, the opposite is unfolding: living cover protects soil, improves infiltration, holds humidity for more months. In just 16-18 months after planting the baby #coffee trees are showing exceptional vigor, deep green color, broad-leaved and turgid, strong foliar flush - even in summer resulting in a remarkable homogeneous establishment. In this environment, the gain in annual moisture retention and longer growth season from living cover, soil retention and organic matter accumulation - likely outweighs the short-period competitive cost during lower-moisture months. #RegenerativeCoffee #NutrientDense #SpecialtyCoffee #AtitlanVolcanoCoffeeRegion

Natural beauty- this is #Sidra variety in Santa Anita Coffee Lot. This coffee distinctly tastes like grape soda in washed version. Last year it produced a super seductive aromatic flower that intoxicated with coffee romance to whom ever would come close… breathing deeply was addictive. This plot is laced with legume laurel tree shade that helps produce complexity in the flavor profile. Sidra is a very delicate coffee tree with very defined structure in the field and in the cup. #CoffeeInspiration #Regenerative #RegenerativeCoffee #Holistic #SpecialtyCoffee #CoffeeFarm #Coffee #CoffeeRoaster #Barista #AtitlanVolcanoCoffeeRegion #FSJM #FincaSanJeronimoMiramar #MoneyCantBuyAuthentic #Soil

In February, I traveled to Guatemala to visit @fincasanjeronimo to see the work that the Bressani family are doing there. Here are the first 77 seconds of a behind-the-scenes video from my visit to San Jerónimo; the full mini film is available on YouTube. Three small day lots of gesha from San Jerónimo were blended to produce AVIARY#018, which will be shipped to season subscribers the week of September 8, with public sale to follow.

In Finca San Jeronimo Miramar - we are passionate about challenging the paradigms that constrain todays coffee and agriculture operations. We believe in jumping from the book and writing our own story. Many restricting ideas are anchored in the way coffee is grown and commercialized. As we say in Guatemala, “we flip the tortilla” to pivot the positioning of the Farmer in order to create value for the people of the #AtitlanVolcanoCoffeeRegion and for everyone involved from the seed to the cup! Ánimo always! In this photo we are challenging the current thought on #CoffeeShade - the industry says it’s a tradeoff between economic success or environmental… Through science and observation we say… “why not both?”- any questions? #CoffeeInspiration #Regenerative #RegenerativeCoffee #Holistic #SpecialtyCoffee #CoffeeFarm #Coffee #CoffeeRoaster #Barista #AtitlanVolcanoCoffeeRegion #FSJM #FincaSanJeronimoMiramar

The ninth coffee of our 2025 season takes us to the slopes of Volcán Atitlán where the Bressani family—fourth-generation coffee growers—operate a dairy and coffee farm, @fincasanjeronimo (@parmagt ), using a regenerative, agroforestry model. This gesha—adapted to their farm but originally from the CATIE collection—is an Aviary exclusive blend of three small day lots (two washed and one honey) presenting as a bright cup with notes of jasmine, tangerine, apricot, raspberry and pineapple. // We anticipate that this coffee will be roasted for 2025 season subscribers the week of September 8, 2025 with public release to follow. // Read more on the website

We've got something truly extraordinary brewing for you and it goes by the name of Guatemala Slow Jam ☕ The smooth, light-roasted coffee starts with a bright base of tart strawberry jam. It's got groovy notes of hibiscus and pomegranate backing it up and it finishes off with a tropical fruit acidity that'll have you kickin' back for more. 🕺 We might even say it's a little funky - ready when you need a little something fresh. The owner/operators of @fincasanjeronimo dedicated more than 3 entire harvest seasons to developing Slow Jam, taking an experimental processing approach. This limited edition coffee won't last long. Get down with the groovy world of Slow Jam Coffee before it's gone!

What we plant in the ground will determine the next 30 years of #coffee cultivation and harvesting. In resilience, thus operations, cherry yield and quality. To consider this and integrate into the farm system is a principle of #RegenerativeAgriculture. In the Finca’s Nursery a very sophisticated and mature system has been fine tuned and maintained for more than three decades. Today it stands out for being unique, natural, biological but very pragmatic… Competition Nursery level is the baseline for all the coffees being deployed into the field in #FincaSanJerónimoMiramar. The most recent development is root training! We think this is going to be a game changer in the lifecycle of the #CoffeeTree. Follow our stories, highlights and check out past post to see what we’ve been up to in all things Nursery!
