My favorite way to cook kabocha squash! I wash these before baking - the skin is edible and great source of extra fiber🙂‍↕️ Kabocha Squash Recipe - Preheat over to bake at 425 F Wash squash throughly Bake squash for 50 minutes, rotating the pan half way through Use a chopstick or fork to puncture and see if it is cooked properly After cooling, remove seeds and enjoy!

Braised Tofu Recipe (두부조림) Firm tofu Onion, sliced Spring onions, minced Bell pepper, minced Marinade: Soy sauce, 1/3 cup Mirim (cooking wine), 1/2 cup Sesame oil, 1 tbsp Allulose (or sweetener of your choice), 1 tsp Red pepper flakes, 2 tbsp In a small bowl, combine soy sauce, milim, sesame oil, allulose, and red pepper flakes. To a medium sized pot, add sliced onions. Place tofu on top of onions and add water until onions are submerged. Pour marinade on tofu. Drizzle with sesame oil. On medium high heat, bring to boil then lower temperature to low heat. Simmer for 20-30 minutes. Turn off heat, garnish with spring onions and bell peppers. Serve immediately with rice or store in fridge up to 1 week.
